Pasta Salad:

Colored type of noodles,

Steam all the veggies you like: broccoli and cauliflower:

Mix some olives, shredded carrots, onions..etc.

Combine all ingredients and pour some Italian dressing on it and season with some salt and pepper.

let it sit for about 2 hours. YUM!

Cold Noodle Salad with Peanut Butter Dressing:

1/2 pound spaghetti or angel hair pasta
1/2 cup creamy peanut butter
1/4 cup rice vinegar
2 tablespoons soy sauce
1 1/2 teaspoons chili-garlic sauce or a dash of hot pepper sauce
1 teaspoon sesame oil (optional)
1 tablespoon grated fresh ginger
1/2 teaspoon grated lime zest
1/2 teaspoon kosher salt
2/3 cup canola oil
1/2 cup fresh cilantro, roughly chopped (optional)
1/4 cup chopped scallions (optional)
1/4 cup salted peanuts, roughly chopped (optional)

Cook the pasta according to the package directions. Drain and rinse under cold running water. Meanwhile, combine the peanut butter, vinegar, soy sauce, chili-garlic sauce or hot pepper sauce, sesame oil (if using), ginger, lime zest, and salt in a blender. With the motor running, slowly add the canola oil in a steady stream.

Return the pasta to the pot and toss with the dressing. Garnish, if desired, with the cilantro, scallions, and peanuts. Serve immediately or cover and refrigerate for up to 3 hours.

Tip: If you're in the mood for salad rather than pasta, toss the Peanut Butter Dressing with shredded cabbage or lettuce, carrots, and cooked chicken.

Yield: Makes 4 servings

Tuna Salad! I mix about a cup & half of mayo with a cup of sour cream(I may use the reduced fat version, but NEVER the fat-free) with dried shallots, chives, garlic, onion powder, thyme, a bit of lemon peel, sea salt, and various other spices. I combine that mixture with some al dente rotini, a can of chunk lite tuna, a can of solid albacore tuna, red onions roasted in olive oil & two bay leaves, and topped with ample scallions. It is chilled for a few hours before eating. Yummy! It's a combination of most of my favorite things, is delicious, and tastes best when cold :)

Any pasta with crab or surimi and cream/yogourth/mayonaise. Add a touch of garlic powder, salt and pepper....YUM!

Orzo or rotini. With some kind of vinaigrette and cheese and veggies. Can't go wrong. (Unless there's mayo in it.)

Mandarin Pasta Salad

Dressing
1 t finely chopped, peeled fresh ginger root
1 garlic clove, pressed with garlic press
1/3 c rice vinegar or white wine vinegar
¼ c orange juice
¼ c vegetable oil
1 t sesame oil
1 envelope Lipton Recipe Secrets Onion Soup Mix
2 t sugar

Salad
8 oz bow tie pasta, cooked as directed
½ cucumber, scored, seeded and sliced
½ c diced red bell pepper
½ c coarsely chopped red onion
1 (6 oz) pkg. fresh baby spinach leaves
1 11 oz can mandarin orange segments, drained
2 c diced cooked chicken
½ c sliced almonds, toasted

1. For dressing, whisk all ingredients. Cover; refrigerate until ready to use.

2.For salad, place pasta in large bowl. Add cucumber, bell pepper, onion, spinach, mandarin oranges, chicken and almonds to pasta. Pour dressing over salad and toss. Serve immediately.

Yield: 12 servings

P.S. You can leave out the chicken and it's just as tasty.

Mediterranean Orzo Salad
Ingredients:
1 pound asparagus spears, trimmed
1 large red bell pepper, cut into 1-inch wedges
1 medium red onion, sliced into 1/2-inch wedges
1 tablespoon olive oil
2 garlic cloves, pressed
Salt and coarsely ground black pepper (optional)
3/4 cup uncooked orzo pasta
1 can (15 ounces) garbanzo beans, drained and rinsed
1 package (4 ounces) crumbled feta cheese
1/2 cup pitted whole kalamata olives
1/4 cup snipped fresh parsley
1/4 cup prepared Greek vinaigrette dressing
Romaine lettuce leaves (optional)


Directions:
1.Preheat oven to 450°F. Combine asparagus, bell pepper, onion and oil in Stainless (6-qt.) Mixing Bowl. Press garlic into mixing bowl using Garlic Press; toss to coat using Mix ‘N Scraper®. Season with salt and black pepper, if desired.
2.Spread vegetables in a single layer on Large Bar Pan. Bake 25-30 minutes or until vegetables are tender and golden brown. Remove from oven to Stackable Cooling Rack; cool completely. Cut asparagus and bell pepper into 1-inch pieces.
3.Meanwhile, prepare orzo according to package directions in Small (2-qt.) Saucepan; drain and rinse under cold running water in small Colander. Place orzo in Stainless (4-qt.) Mixing Bowl. Add vegetable mixture, beans, feta cheese, olives, parsley and salad dressing; toss gently. Serve at room temperature or cover and refrigerate until ready to serve. Serve over lettuce leaves, if desired.
Yield: 4 servings Cook’s Tips: Vegetables can be roasted up to 2 hours ahead. Let stand at room temperature until you're ready to use them.

Orzo is a tiny, rice-shaped pasta, which can be found in the pasta section of most grocery stores.

To trim asparagus, snap off and discard tough stem ends.

Italian dressing can be substituted for the Greek vinaigrette dressing, if desired.


Confetti Pasta Salad
Ingredients:
1 cup coarsely chopped broccoli
1 cup coarsely chopped cauliflower
1 package (9 ounces) refrigerated cheese-filled tortellini, cooked and drained
1 medium carrot, thinly sliced
2 tablespoons thinly sliced green onions
1 garlic clove, pressed
1/2 cup fat-free Italian salad dressing
1 teaspoon hot pepper sauce (optional)
1/2 cup (2 ounces) grated fresh Parmesan cheese


Directions:
1.Combine all ingredients except Parmesan cheese in Classic Batter Bowl; toss gently.
2.Sprinkle with Parmesan cheese. Serve using Stainless Serving Spoon.
