Don't put them under the tree for starters. If you really want it to look like you've got presents under the tree, wrap a few empty boxes and stage the look. I keep all the presents locked in my bedroom until just before Christmas. To prevent a case of the snoopies, I also ...
Don't use name tages. I write the name in small handwriting on a seam of the paper in ball-point ink, OR I use color-coded wrapping paper or ribbons. For example, hubby get the blue paper with the penguins on it OR hubby gets all the packages with blue bows on them.
In year's past, I've used the "Wal-Mart Closest" to hide the gifts in -- I put them in lay-away and leave them at Wal-Mart until the last day to pick them up. Then I bring them home and wrap them. But this is the last year for Wal-Mart's lay-away program, so I'll have to find a new trick for next year.
I've also used coded name tags, if I wanted to use name tags. I put daughter 1's name on the packages for daughter 2, put hubby's name on packages for son 1, and such. As long as I know the "secret code", then it's all good.
I use LOTS of tape -- the hard to tear kind! I tape all of the seams all the way across the package, so there are no fingerholds to start ripping into the paper. If they try, they mess up the wrapping and I know they've been there and tried that.
I donate all of the wrapping paper left-overs to the local HeadStart or pre-school, or nursing home, or some other worthy group after I finish wrapping the presents. That way nobody can open and re-wrap a present because there isn't any more of that paper in the house -- if it has a different paper, I know they've been there and tried that.
And the ultimate threat that you have to be willing to carry out if you threaten it ... If you snoop in your Christmas presents, I will give them to the _____ (insert charity name here) instead of you. My brother was a snooper and my mother threatened this one year. He snooped, she donated and he didn't get any gifts for Christmas that year ... put a stop to his snooping. :)

Warn them that if they do, santa will come take them all away.
This question reminds me of a lesson learned when I was a child- I mastered the art of being able to open the wrapping paper carefully, and sealing it back so it could not be detected. One year I did that and I knew what I was getting 3 weeks before christmas. Sometimes I would even play with my toys and get them back into the wrapping paper before my parents got home from work. So when the big day came around, it was the most BORING christmas ever! My parents even asked me why I wasn't very excited. At the time I thought that I had fooled them but years later I realized that they were on to me the whole time and knew what I was up to. I tell this same story to my nephews and nieces every time they get impatient about the gifts and then they don't mind holding out until the big day.

Why don't you put some coal or something equal such as a rock, or a stick, or dung in a box, wrap it and leave it to be opened. Hide the real ones. Once the decoy is opened inform them that is what happens when they open them early. Or in the alternate you may want to make a contest out of whoever lasts the longest without unwrapping their gifts and have some sort of reward to the winner.

Don't put name tags on them. Use a number system. Write down the numbers 1-25 in a notebook and keep arecord of who the present belongs to and hide the notebook. Put the names on them the night before you open them.

Put dummy presents, with notes inside saying you will have to wait until christmas. Then hide the real presents at work.

lol good luck. I recall when my sister, brother and I were young we'd open them real carefully and then wrap them back up. Took YEARS for my folks to realize we were doing it. If you don't want them to open them early hide them very well so they can not locate them otherwise unless you plan on staying awake 24-7 right next to the gifts your going to lose the battle.
