Since watching my meals, I mostly eat lean chicken, brown rice, and wheat pasta with veggies for at least two meals. I only need are a few tasty sauce and/or gravy recipes to spice things up. Any ideas?

It can't get any easier than this.....

Gravy

INGREDIENTS

* 2 cups chicken stock
* 3 tablespoons cornstarch
* 1 teaspoon poultry seasoning

DIRECTIONS

1. Bring chicken stock to a boil. Dissolve cornstarch in a small amount of cold water and add to chicken stock. Season to taste with poultry seasoning and cook until thickened. Serve!

It will be more cost effective to buy the sauces you want from the supermarket - and guarantee success. However, if must make one from scratch try something simple go for a ragu for the pasta and honey sauce for the chicken and rice. You can get both off the shelf in a jar.

Light Italian style pasta or rice sauce ...
Dice about 1/2 cup of onion and a couple cloves of garlic (or about 2 tablespoons of dried garlic). Saute the onion and garlic in olive oil until tender and clear. Add one 28-ounce can of chopped tomatoes, about a tablespoon of "Italian" seasoning, about 1 tablespoon of sugar and a small splash of vinegar. You can add some broccoli, olives, or whatever other veggies you'd like to the sauce. If you want, you can also add some browned hamburger or Italian-style sausage but I usually skip the meat when I'm making this sauce. Let simmer on a low heat for a few minutes to heat through, stir into pasta or rice and serve.

Bar-B-Que style Chicken ...
Mix together about 1 cup of sugar, 3 tablespoons of dried garlic powder, 3 tablespoons of dried onion powder, 1 tablespoon paprika, 1 - 2 tablespoons of dried chili powder, and 1 tablespoon Italian seasoning. Store in a tight-sealing container, like a used spice bottle with a shaker lid. When ready to use: wet the chicken with a little bit of water and place on a greased baking sheet. Sprinkle some bar-b-que seasoning on both sides of the meat, and rub into the meat with your fingers (wash your hands afterwards!!!). Bake in the oven at 350 degrees for about 45 minutes or until the meat is done. This meat rub can also be used on beef and pork. You can cook with it in the oven, under the broiler, or on the grill. Makes a nice crispy, bar-b-que flavored coating on the meat.

Orange Chicken ...
Mix about 1/2 cup of thawed orange juice concentrate with a couple tablespoons of olive oil, a splash of Worchestershire sauce, and a tiny bit of water. Place chicken in a bowl, pour the sauce over the chicken, and allow the meat to marinate for a couple hours. Remove the chicken from the bowl, place on a baking sheet and bake in the oven at 350 degrees for about 45 minutes or until the chicken is done. If you prefer or if you don't have time to marinate, you can pour the sauce directly on the chicken and bake in the sauce.

You can substitute lemon juice or another juice concentrate for the orange juice concentrate. Mix until it's slightly thickened, but still pourable. Experiment with different flavors and spices to come up with something you like -- be sure to write down what you did, so you can make it again if you liked it. :)

Another variation of the Orange Chicken is to spread a small amount of orange marmalade (jelly) on each piece of chicken and bake in the oven.

Use a can of cream of mushroom soup to substitute gravy. Go to www.Campbells.com and they have good recipes. Also try www.recipezaar.com and www.allreipes.com. They have good ones too, all for free.

get a can of chicken broth and heat it in a sauce pan, add some corn starch to thicken it . season it to your liking. you can even use the fat free stuff. but don't add the corn starch directly to the broth, dissolve a couple tbs of corn starch in a little bit of warm water and then add that to your broth. it should look like milk.

try low sodium campbells cream of chicken or cream of mushroom soup diluted with skim milk....tasty!
