I used to work for a food company and the best advice I can give you is get your Associates culinary degree.

If you are going to concentrate on food development vs. Restaurant work...you don't need to go to the CIA or CB...just get your standard AS degree and then try like hell to get an intership.

100% of the people we hired into R&D came from our intern program.

We would have 10 interns...work them like dogs and then hire the top 1-3 each year.

Also...you need to have a good palate (tasting ability)...one test...have someone take 10 items from your pantry, fridge, etc. and put them in identical cups...blindfold yourself and see if you can identify the items strictly by taste and mouthfeel...if you can't...you will have a hard time in food R&D as 80% of the time you deconstruct and reconstruct food items from various sources.

its a long shot but try contacting The Fat Duck in Bray. They have a food lab along side their restaurant run by Heston Blumenthal. im sure if you showed interest at least they would point you in the right direction.

I guess you could say I've done that for myself, but for my own restaurant.

What you really have to do is get a restaurant/hospitality degree first. Then the doors will open for jobs.
