Ingredients:
1/2 cup sweet butter, melted
1 cup heavy cream, warmed
3/4 cup freshly grated Parmesan cheese
Salt to taste
1/4 teaspoon freshly ground pepper
8 ounces Fettuccini or Angel Hair, cooked
3/4 pound cooked shrimp or chicken (optional)
Directions:
Mix first 5 ingredients. Pour over warm pasta. Add shrimp and toss to coat. Serve immediately.

ALFREDO SAUCE
1/2 cup cream cheese
1 cup milk 0-2 %
3 tbsp freshly grated Parmesan cheese
1 clove of garlic
1 tbsp pepper
1/2 tsp salt
3 tbsp dry parsley/ 1/2 cup fresh
The best way to make this consistent is to use a blender, put cream cheese, milk, Parmesan, cheese, garlic, pepper and salt in blender. Blend until there are no clumps, poor into sauce pan on medium heat, cook for about 10 minutes, well cooking add parsley, is fresh chop finely and extra for garnish.
If you find the original sauce using heavy cream and butter to be too heavy, then this modified, lighter version may be a healthier choice for you.

This is a recipe from Tyler Florence which I have made with success (though I substituted half and half for the cream):
Alfredo Sauce:
1 pint heavy cream
1/2 cup (1 stick) unsalted butter, softened
1 cup freshly grated Parmigiano-Reggiano
Freshly cracked black pepper
Chopped fresh flat-leaf parsley, for garnish
To prepare alfredo sauce: Heat heavy cream over low-medium heat in a deep saute pan. Add butter and whisk gently to melt. Sprinkle in cheese and stir to incorporate. Season with freshly cracked black pepper. In a large stockpot, cook pasta in plenty of boiling salted water for 3 minutes. Quickly drain the pasta and add it to the saute pan, gently toss the noodles to coat in the alfredo. Transfer pasta to a warm serving bowl. Top with more grated cheese and chopped parsley. Serve immediately.

25 g grated Parmesan cheese
30 g grated Romano cheese
1 egg yolk
10 g grated Parmesan cheese
DIRECTIONS
Melt butter or margarine in a saucepan over medium heat. Add heavy cream, stirring constantly. Stir in salt, nutmeg, grated Parmesan cheese, and grated Romano cheese. Stir constantly until melted, then mix in egg yolk. Simmer over medium low heat for 3 to 5 minutes. Garnish with additional grated Parmesan cheese, if desired.

2 quarts water
2 cups heavy cream or half and half
3 tsp granulated garlic (plus or minus according to your taste)
3 chicken bullion cubes or 2tbsp granulated
salt and pepper to taste
3 cups grated Parmesan cheese
1-2 cups rue made with oil and flour mixed well with no lumps(kind of thick but not too)
Bring the water, chicken bullion, salt and pepper to a boil...tighten up to your desired consistency with the rue, remember you will be adding the cream that will thin it a little, add the cream and then the Parmesan cheese.stir till the cheese is all melted and remove from heat and you are done! takes about 10 min from start to finish.

I use 1 pt. whipping cream, 1/2 stick butter, and 1cup pamesan cheese.
First melt the butter and add the whipping cream. Put it on med heat a stir continuously. ( You don't want burnt sauce).
Once it gets to a boil (still stir), add the cheese. Continue to stir until all the cheese it melted.
I also add seasoning depending on what taste I am going after. I always add some garlic and pepper. I may add cajun seasoning too.

Directions:
