raw, they have a slightly sweet, clean, almost earthy taste... a little like a water chestnut and a very mild fresh mushroom, blended.
the smell of roasted turkey filled our camp office, when we roasted them in the toaster oven.
later, i roasted some over a fire in a campfire popcorn popper, and when warm, they tasted to everyone who tried them (about 12-15 of us) like turkey or ham.
a couple days later, cooled, not such a strong meat flavor... more just a roasted nut.
the consistency throughout, is like somewhere between a cashew and a macadamia nut, i find.

My first impression? Like big moist chick peas or garbanzo beans but a little sweeter/firmer.
