Mix it with ground pork and veal to add more fat as venison is very lean and make it into hamburger patties or meatloaf too by adding chopped onion, clery, salt, pepper and a dash of Worscestershire sauce.

"Venison Taco Pie" - 6 servings
1 lb. ground venison
1 (11 oz.) can Mexicorn; drained
1 (8 oz.) can tomato sauce
1 envelope taco seasoning
1 (7 1/2 oz.) tube refrigerated buttermilk biscuits
1 cup (4 oz.) shredded Cheddar cheese
In large skillet, cook venison over medium heat until no longer pink; drain. Stir in corn, tomato sauce and seasoning; keep warm.
For crust, press biscuits onto the bottom and up the sides of an ungreased 9" pie plate. Bake at 350* - 5 minutes. Spoon venison mixture into crust; sprinkle with cheese. Bake 20-25 minutes or until filling is bubbly and biscuits are golden brown. Let stand 5 minutes before serving.
"Christmas Meat Pie" - 6 to 8 servings
1 lb. ground pork
1 lb. ground venison
3 cups water
2 medium onions; chopped
1 medium carrot; chopped
2 tbsp. beef gravy mix
2 tsp. dried thyme
2 tsp. ground mustard
3 garlic cloves; minced
1 tsp. rubbed sage
1 tsp. pepper
1/2 tsp. salt
3 cups hot mashed potatoes (prepared without butter or milk)
Pastry for double-crust pie (9")
Milk
In a large skillet, cook pork and venison over medium heat until no longer pink; drain. Stir in water, onions, carrot, gravy mix, thyme, mustard, garlic, sage, pepper and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 1 hour or until vegetables are tender, stirring occasionally. Drain; stir in potatoes.
Line a 9" deep-dish pie plate with bottom pastry; trim even with edge. Add meat mixture. Roll out remaining pastry to fit top of pie. Make decorative cutouts or cut slits in pastry; place over filling. Trim, seal and flute edges.
Brush pastry and cutouts with milk; place cutouts on pie. Bake at 400* - 15 minutes. Reduce heat to 350*. Bake 35-40 minutes or until golden brown.

I use it where I would use ground meat, I've made meatloaf (which you can use half venison half beef if you prefer because it tends to be dry)
Just remember that it is extremely lean and add oil accordingly.

I've heard burgers are good. Maybe some spaghetti, goulash, or other pasta dish. Meatloaf or meatballs.
