Maple Honey Ham
7 pounds Half Ham (Cook's butt portion) -- 7-10 pounds
1 Cup Pure Maple Syrup
3/4 Cup Honey
1 1/2 Tablespoons Mustard
4 Tablespoons orange juice concentrate
4 Tablespoons Ketchup
20 Whole Cloves
1 1/2 Tablespoons Worcestershire sauce
1 1/2 Teaspoons Curry powder
2 1/2 Tablespoons Soy Sauce
2 Cloves Minced garlic
2 minced Green Onions
Unwrap ham, remove any fat thicker than 1/4 inch from the outside of the ham. Place ham, fat side up, on a rack in the 15-inch deep Dutch oven. Place 20 coals around the top edge of the Dutch oven and 12 coals in an evenly spaced 16-inch circle under the oven. This will evenly heat the top, sides and bottom of the oven to approximately 375 degrees. Replace the coals every hour to maintain the temperature. Rotate Dutch oven and the lid 1/4 turn every 15 minutes to avoid hot spots. Cook for 15 to 20 minutes per pound until the internal temperature of the ham reaches 125 degrees. Remove the ham from the Dutch oven. Drain the ham drippings and remove the rack. Combine the remaining ingredients except for the whole cloves in the Dutch oven to make a sauce. Bring to a boil, then simmer for 10 minutes, stirring occasionally. While waiting for the sauce, score the top of the ham by cutting 1/4 inch deep slices at 45 degree and 135 degree angles 1 1/2 inches apart in a criss-cross pattern. At the intersections insert whole cloves. Return the ham to the Dutch oven and baste the ham with the sauce, basting every 10 to 15 minutes. Cook until the internal temperature of the ham reaches 160 to 165 degrees. The ham at this point will be moist, but medium to well done.

might help to appreciate what form of ham. Ham is actual already cooked and all you're doing is heating it up. i'm going to assume you p.c. to sluggish cook dinner in the oven. reckoning on the dimensions cook dinner it at 325.
