Me and my daughter bake something every year but my niece is allergic to peanuts(can't have any nuts-recent allergy) and I can't decide what to make. Can anyone think of anything besides gingerbread men?

Sugar cookies, you can cut them out in Christmas tree shapes.

2/3 cup shortening
2/3 cup butter
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
3 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/3 cup granulated sugar for decoration
(You can add green food coloring for Christmas, or half the dough and use red and green in each half)

Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, cream together the butter, shortening and sugar. Stir in the eggs and vanilla. Combine the flour, baking powder and salt, stir into the creamed mixture until dough comes together. Roll dough into walnut sized balls and roll the balls in sugar. Place them on an unprepared cookie sheet about 2 inches apart.
Bake cookies 10 to 12 minutes in the preheated oven, until bottom is light brown. Remove from baking sheets to cool on wire racks.

Most any recipe that contains nuts can have them left out. Simply eliminate the nuts and all is well - just make sure to use canola or vegtable oil that was not made in a plant that processed nuts - it will say on the package and you will be fine. A good subsitute for peanuts are soy nuts (available at health food stores) they are just toasted soy beans that have been salted and can be a nice surprise in recipes calling for peanuts to provide that crunch or really surprise every one with these:

1 1/4 cups firmly packed light brown sugar
3/4 cup soy nut butter
1/2 cup vegetable shortening
3 tablespoons soy milk
1 tablespoon vanilla extract
1 large egg
1 1/2 cups all-purpose flour
1/4 cup soy flour
3/4 teaspoon baking soda
3/4 teaspoon salt
1/2 cup roasted soybeans, for topping

Preheat oven to 375°F.
Combine brown sugar, soynut butter, shortening, soy milk and vanilla in a large bowl; beat at medium speed with an electric mixer until well blended.
Add egg to sugar mixture; beat just until blended.
Combine flour, soy flour, baking soda and salt.
Add to sugar mixture at low speed; mix just until blended.
Drop dough by teaspoonfuls 2 inches apart onto ungreased baking sheets.
Flatten slightly by pressing 4 soynuts into each cookie center in a pinwheel design.
Bake cookies for 7 to 9 minutes or until set and just beginning to brown; do not over brown.
Cool 1 minute on baking sheet.
Remove cookies to wire rack to cool completely.

I have made these for classroom treats- as I never know who may be alergic -and they are always a hit. Good Luck!

(Christmas cookies)

1¾ cups sugar
1 cup (2 sticks) good oleo or butter
4 cups flour
2 large eggs
1 level t soda
1 t vanilla
⅓ t salt
1 t butter flavoring

Cream oleo, add sugar and beat until fluffy. Add eggs and beat in. mix in vanilla and butter flavorings. Stir salt and soda into flour. Add flour a little at a time to egg mixture. Dough will be very thick. Can be shaped into rolls, chilled and sliced. For Christmas cookie shapes, roll out on lightly floured surface. Cut desired shapes. Bake on lightly greased cookie sheets at 350° for 10 – 12 minutes or until lightly browned.

½ cup sugar
¼ cup white karo
2 T water
2 egg whites
1 t vanilla

Boil sugar, karo and water to firm balls stage (242°). Cooks quickly. Beat egg whites until stiff enough to peak. Pour hot syrup slowly over whites while beating. Add vanilla and mix.

Makes nice soft workable icing.

Frosted fun-shaped sugar cookies are always really good. Get some Christmas cookie cutters, frosting, food coloring (green or red), sprinkles or sparkles or candies to decorate with. We do it every year. Sooo much fun!

Oh my.... there are more recipes for cookies without peanuts than with.... open any cookbook or visit any recipe website and you will find kajillions of them!!!

You can make these Fudge Balls without nuts; I have, my Dad can't have nuts either...

ESTHER's FUDGE BALLS:
2 1/2 cups vanilla wafer cookies, made into crumbs
1 cup (6 oz.) semisweet chocolate chips
3 Tablespoons light corn syrup
1 teaspoon vanilla extract
1/2 cup evaporated milk
1/2 cup confectioners sugar
1 cup walnuts, chopped
Chocolate Sprinkles
Crush vanilla wafer cookies in a plastic bag with a rolling pin or process in food processor into crumbs and set aside. Stir chocolate chips in a bowl over hot water or use a double boiler; until melted. Stir in corn syrup. Add vanilla, evaporated milk, confectioners sugar, cookie crumbs and nuts and mix thoroughly. Refrigerate for about 30 minutes. Shape dough into 1-inch balls and roll into chocolate sprinkles to coat. Place on wax paper to set.

ESTHER's CREAM CHEESE TARTS:
1 (8 oz) package cream cheese, softened
1 egg
1/2 cup sugar
1 teaspoon vanilla extract
5 oz graham crackers, crushed
2 teaspoons sugar
2 teaspoons butter, melted
1 can Cherry Pie Filling
Beat together cream cheese, egg, sugar and vanilla extract until smooth. Set aside. In another bowl combine graham crackers crumbs, sugar and melted butter. Line tart pan with small paper liners. Put a teaspoon graham cracker mixture in liner and press against liner to make a crust. (have crumbs go up side of liner) Spoon tablespoon cheese mixture over crumbs. Bake at 350 degrees for 15 minutes. Cool on rack. Top with cherry pie filling or desired fruit. Keep Refrigerated.

OLGA's SUGAR COOKIES:
1/2 cup butter (softened)
1/2 cup shortening
1 cup sugar
3 eggs
1 1/2 teaspoons vanilla extract
3 1/2 cups flour
1 teaspoon baking soda
2 teaspoons cream of tartar
In a large bowl, cream butter, shortening and sugar. Add eggs and vanilla extract until light and fluffy. Sift dry ingredients together and add to butter mixture until well blended. Chill dough for 1 to 2 hours. On a lightly floured surface, roll dough to 1/8-inch thickness. Cut with cookie cutters. Place on greased baking sheets or parchment paper. Sprinkle with colored sugar or leave plain to frost later. Bake at 350 degrees for 5 to10 minutes or until lightly browned. Cool on wire racks.

OLGA's JAM BARS:
1 1/2 cups sifted flour
1/2 teaspoon baking powder
1/2 cup butter
1/2 cup sugar
1/2 teaspoon almond extract
1 egg
3/4 cup jam or preserves
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
Sift together flour and baking powder in a small bowl and set aside. In a large bowl cream butter, sugar and almond extract. Beat in egg thoroughly.
Add sifted dry ingredients to butter mixture and stir to blend. Spread a little less than half the dough into a greased baking pan
(about 11 x 7 x 2 in.) In a small bowl, mix jam with cinnamon and ground cloves. Spread over dough. Drop remaining dough in blobs over jam; spread carefully with small spatula. Bake in hot oven at 400 degrees for about 20 minutes. Put on rack to cool; cut into squares.
