There are several ways to check:
1) The big board of arrivals/departures that is located over the ticket windows
2) There are monitors located all around the terminal with screens with train time/track/destination - for this you would need to know either the time your train leaves or the last stop on the train
3) In the central of the main room, there is a round booth with a clock on top of it - you can ask the clerk there where your train is
4) When you get to the track - there is a display board that has all the stops the train on that track will make - stop and make sure that your stop is on there.
Also - on many of the tracks at Grand Central you walk down a center aisle with trains on each side - make sure you know which side is the correct train/track!

I assume you're on Metro-North? You can do the following:
1. Go to the Metro-North website, and look up timetables -- These will show you what line your station is on (Hudson Line, Harlem Line, New Haven Line). This will help you make sure you don't take the train on the wrong line. Web link is below.
2. Go to your local station, and pick up a timetable there. It will show you the same info.
3. When you arrive at Grand Central, you can also pick up a timetable at the big information booth in the middle of the terminal, if you forgot to get one before.
4. Now that you know what line your station is on, you presumably won't catch the train on the totally wrong line. However, if you're going to a smaller station, it's possible the express trains won't all stop there -- you may need a local train. (Or if you're going way up north, for example, be aware there are some Hudson Line trains that only go as far as Croton-on-Hudson, and don't go all the way to Poughkeepsie). So look at the timetable, to make sure that the train you plan to catch will actually stop at your station.
5. There are TV-screen things with arrivals and departures, posted all over the station. Those will say that the 8:54 train to Poughkeepsie is leaving from Track 17, or whatever track. Now, as long as you find that track, you're OK. It should not be hard to find Track 17, or whichever track it is, if you are not racing at the last minute, and if you are reasonably sober.

The message boards in the main concourse tell you general information such as departure time, final stop, and track. If you want to double-check whether the train you are about to travel on is going to stop where you want it to (and make sure you don't end up in the wrong place), just before you enter the track area there is message board for each track that lists every station at which the train will stop.

Look at the big board or the electronic screens
The electronic screens will color coordinate to line you need to take.
Before you go down onto the track look at the board next to the entrance of the track. It will list the train line, departure time and all stops.

aparently the last time you were there you missed the big @ss information booth in the middle of grand central. where several people are just waiting to tell you which train you need to get on. just go to the booth tell them what station your heading to and they will say ok track number ---

If you're at the station, just look up at the departure and arrival boards. If you want to know before you leave home, just call the 800 number for amtrack and you can get the info.
The best way, howver is to walk up to any counter, show your ticket to the person behind the counter and they will direct you.
