I'm making a wedding cake. I've made a test cake and it turned out great. I need to know if I can make the layers in advance and how many days in advance can I make them?

for optimum freshness i would recomend no more than 2 or 3 days.

if you are a professional you need to know food service standards, if you know any food service managers, they can give you a more in depth answer and why, but mainly the yeast and egg in the cake, need to be kept cold so that they do not allow the growth of infecious bacteria.

That depends on the type of cake - if it a light cake it will be fine on the counter covered up to 2 days in advance - if it is a heavier fruited style pour warm sugar syrup over it to create a thin crust to protect and preserve - this will also make frosting easier. Also do not frost until the day it will be served - the frosting makes the cake spoil faster. If you freeze the cake - again unfrosted will last longer and not get that freezer taste. Good Luck!

Yeah, I would just make it a day in advance and keep it in the fridge.

You know, it's tradition to keep wedding cake in the freezer for a year after the wedding and eat a piece on your first anniversary. My wife and I did that and it tasted good.
