Garlic Mashed Potato

4 to 6 pounds Yukon gold potatoes, peeled
Kosher salt and freshly ground black pepper
1 cup heavy cream
1/2 stick (1/4 cup) unsalted butter
4 cloves garlic, lightly crushed
3 sprigs fresh thyme
2 tablespoons chopped chives



Put the cut potatoes into a large pot, cover them with cold water, and add a large pinch of salt. Bring to a boil and simmer until the potatoes are fork tender, about 20 to 30 minutes. Drain well. Meanwhile, in a small pot heat the cream, butter, garlic, and thyme. While the potatoes are still warm, press them through a potato ricer or food mill into a bowl. Stir in the warm cream a bit at a time, straining out the solids, until the potatoes are fluffy. Season with salt and pepper and gently fold in the chives. Serve immediately.

Habichuelas is the traditional side dish served with roast pork. Note that the recipe above is for people who don't know how to cook. The ingredients include alot of MSG because those idiots at Goya can't seem to figure out that is highly inappropriate and racist to include as the main focus of "hispanic foods". But, making that stuff from scratch takes alot of time and eating that MSG once in a while won't kill most people (just some people). Anyway. It's tasty.

I have just cooked stuffed pork fillet. I sliced a large eating apple and roasted the slices for about thirty minutes in the oven while the pork was cooking. It turned out delicious.

I like to serve pork raost with wild rice and roasted butternut squash. Usually I just buy a wild rice mix from grocery and whip it up-Trader Joe's has a good one. To make the butternut squash-buy a squash, peel, and cut into uniform cubes...toss with salt, pepper, and olive oil-roast in a 375 degree oven until tender....yummy.

1 1/2 lbs carrots, sliced
1/2 teaspoon salt
3 tablespoons butter
1/3 cup honey
1 teaspoon lemon juice
Steam or boil carrots in salted water for 10-15 minutes until they are tender-crisp and drain.
Heat butter, honey and lemon juice in a heavy skillet for about 2 minutes or until hot and bubbly, stirring often.
Add carrots; cook uncovered 4-7 minutes or until they are glazed, stirring frequently.


Baked sweet potatoes and butter salt and pepper and a nice classic American salad would be good too and don't forget the sweet tea - yummy!

Roasted potatoes with fall veggies-also roasted along with the potatoes.
Onions and apples always go well with pork, along with a green salad and cornbread and maybe some scalloped potatoes...YUM
Baked acorn squash filled with butter and some brown sugar along with rice and wild rice and mushroom pilaf might be another good option. Happy cooking!

Roast parsnips and swede mash with apple sauce. The sweetness of the veggies and the tartness of the apple sauce goes brilliantly with pork.

Yummy! I love pork roast. I usally serve it with sauerkraut (seasoned with caraway seeds) and bread dumplings covered with gravy from the pork roast. Bread dumplings are found in the frozen foods section of the grocery store. If you can't get the dumplings, try another kind of dumpling, or use boiled red potatoes.
