You are quite right the Bible doesn't mention dinosaurs because it was written by people (Matthew, Mark, Luke & John etc.) and not by god and people hadn't discovered and identified fossilized dinosaur bones when it was written.
The creationists and the 'intelligent design' crowd have come up with various ways of trying to retrofit dinosaurs into their theories. One that they like is that the dinosaurs are 'proof' of Noah's flood. They go to a lot of lengths to try and dis-prove all the dating techniques that are used to judge the age of dinosaur bones, but actually these are based on solid scientific theory and evidence and have measurable levels of errors and things.

Some Jews and Christians believe that dinosaurs appear in the Old Testament, and regard this as evidence that the animals were still alive during early human history.
As it is a modern coinage derived from Greek, the Bible does not use the word "dinosaur", but the Hebrew word tanniyn (/tan·Ënin/) may be interpreted as referring to them[citation needed]. In English translations, tanniyn may be translated as “sea monster” or “serpent”, but it is usually translated as “dragon”. These creatures are mentioned nearly thirty times in the Old Testament and are found both on land and in the water. At another point, the Bible describes a huge creature called a "behemoth" (Job 40:15-24) whose "tail sways like a cedar"; the behemoth is described as ranking "first among the works of God" and as impossible to capture (vs. 24). Some Biblical scholars identify the behemoth as either an elephant or a hippopotamus, but these animals have very thin tails that are not comparable to a cedar tree. Creationists therefore identify the behemoth with dinosaurs like Brachiosaurus and Diplodocus, and most commonly the Apatosaurus which has a huge, cedar-like tail.[2] , [3] Critics point out that the tail is described as swaying like a cedar, not being as large as a cedar.
The Leviathan is another creature referred to in the Bible's Old Testament; it is described as having a variety of dinosaur, dragon, and water-serpent-like characteristics.

I think that the seven days weren't really seven days but longer than that. In that time, God created them. The Bible does talk about dinosaurs, like the Leviathan - Job. If God created the world, why wouldn't he have created the dinosaurs?

Everything that was created was created by Jesus Christ. The bible doesn't talk about many things, especially things that hadn't been named yet, like dinosaurs. Great lizards were named dinosaurs during the dark ages.
On the other hand, Job, the earliest written book in the bible, talks about the behemoth:
I made it, just as I made you. It eats grass like an ox. See its powerful loins and the muscles of its belly. Its tail is as straight as a cedar. The sinews of its thighs are tightly knit together. Its bones are tubes of bronze. Its limbs are bars of iron. It is a prime example of God's amazing handiwork. Only its Creator can threaten it. The mountains offer it their best food, where all the wild animals play.
Job 40:15-20
which sounds a lot like a brontosaurus.

The Bible says he created all things. So he must have created them too. Can you tell me how long Adam was in the garden? The Bible said that the devil was cast out of heaven to the earth. We the world outside the garden already corrupted by sin? I think it was I believe there were dinosaurs and a host of a lot of different creatures on the earth for maybe a very long time, hundreds of thousands if not millions of years... Jim

Lots of things are not mentioned in the Bible, but it does not mean they are not true. The Bible does mention there being "giants" in the earth in Genesis, with no obvious explanation about what the giants are. The Bible does not hold all answers, nor should it. At some point you either decide to accept everything in the Bible as all you need to know and go on faith, or you question and find out Truth, which may or may not include the Bible.

The Bible is a series of writings describing the relation between God and humankind. Dinosaurs predate human existance.

the word "dinosaur" is a modern word..
Yes, when the bible says God created the animals of all shapes and sizes.. he included dinosaurs.. Just cause you dont find the word in the bible (or other religious texts like Islam/Judism/buddism etc) We are to conclude that this statement of animals is all inclusive of every living creature that ever existed on earth..
