I adore cheese with a passion. I have it with almost everything. What is your favourite cheese recipe where cheese is the MAIN ingredient?

Cheesy Squash Casserole

12 yellow squash or about 2 lb
4 slices bacon
¾ cups chopped onion
3 beaten eggs
1½ cups shredded cheddar cheese
salt and pepper
1½ T Worcestershire sauce

Cook squash in small amount of salted water. Drain well and mash. Cook bacon until crisp. Drain well, reserve grease. Combine all ingredients. Put into greased casserole. Bake at 350° for 30 min.

Cheesy Eggplant

Peel eggplant. Slice into ½ ” slices. Place in salted water for 30 min. Drain and pat dry with paper towels. Spread top side with thin layer of mayonnaise. Sprinkle generously with Parmesan cheese. Place on baking sheet which has been sprayed with Pan or lightly greased. Place under broiler. Broil 5-8 min or until tops are nicely browned. Serve hot as vegetable.

Hot Cheese Snacks

1 cup grated sharp cheese
1/2 cup soft butter or oleo
1 cup and 2 tablespoons flour
Ground hot pepper

Mix cheese, butter and pepper. Add flour and mix well. Roll into marble sized balls and place on ungreased baking sheet. Press well with fork. Chill. Set oven at 450 degrees and bake 10 minutes. Better served hot.

Creamy Pimiento Cheese

1 8-oz. pkg cream cheese
8-oz. shredded sharp cheddar cheese
1/4 cup plus 2 tablespoons mayonnaise
Dash of garlic powder
4-oz. diced pimiento drained

Mix cheeses, mayo and garlic with mixer until smooth. Stir in pimiento.

Cheese garlic spaghetti bake.

Take some spaghetti and cook in boiling salted water til cooked. Drain the spaghetti leaving about a tablespoon of the cooking water to keep the spaghetti moist.
Crush 2-3 garlic cloves.
Grate LOADS of a strong flavoured cheddar.
Put the spaghetti in a fireproof bowl or dish Mix the garlic in with the spaghetti until it is evenly distributed.
Mix in the cheese in the same way. Grate some more over the top.
Put in a hottish oven and bake for 20-25 minutes or until all the cheese has melted and the top has started to go crispy and golden brown. Grate some black pepper over the top and enjoy.
This dish is greasy and gooey and cheesy and crunchy in the most heavenly way. Now I'm hungry too!

Cheese Bob here, If you want cheese to be a major ingredient how about a grilled cheese sandwich. A little 5-8 year old Wisconsin Cheddar some wheat or rye bead and a little butter. Pretty close to heaven. Of course there is ham and cheese with some real Swiss cheese.

I love cheese. I just adore it. So many kinds, flavors and textures make cheese on of my favorite foods. My favorite cheese recipe so far would have to be cheese fondue. It's rich, savory and with all the other foods you get to dip in this flavorful sauce, it's a great appetizer or you can make it into a great meal. It's also great for parties or as part of a big celebration or feast. Here's the recipe.

Swiss Fondue
3/4 c. white wine
1 T. lemon juice
1 1/2 c. (6 oz.) shredded emmentaler cheese
1 c. (4 oz) gruyre cheese
1/8 t. black pepper
1/8 t. ground nutmeg
2 t. cornstarch
1 T. kirsch (cherry brandy)
cubed French bread, steamed vegetable or whatever else you can think of

Bring wine and lemon juice to a low boil in a heavy saucepan; add cheeses, pepper and nutmeg, if desired. Reduce heat to medium-low and cook, stirring constantly, 5-7 minutes or until cheese melts. Whisk together cornstarch and cherry brandy. Stir mixture into cheese; cook, stirring constantly, 3 minutes or until thickened. Transfer to fondue pot and keep warm. Serve with bread, vegetables, etc. Makes 2 cups.

I make a mean baked Macaroni and Cheese. I use Sharp and Mild Cheddar, Mozzarella, and Cream Cheese. 2 blocks of each and 2 bags of shredded........according to your taste and love of cheese. You can cut the blocks in small cubes or buy the cubbed cheese in a bag. I tend to think Kraft's or Cracker Barrel Block cheese taste better. Get a nice sized sauce pan adding a table spoon of your favorite butter or margarine. The spreads make for a creamier base and melts nicely. Add a can of Evaporated milk. Keeping your heat on med-low, add some blocks and some shredded. Shirring constantly to insure an even and creamy melt. Add half a block of Philly Cream Cheese or scoop out from the spread version. Sprinkle in Garlic Powder and Pepper and the rest of your cheese. Add salt depending on the taste of the cheese sause. Another can of milk may be needed depending on how thick or creamy you want your Mac N Cheese. Once evenly melted, added to your desired amount of cooked Elbow Macaroni in a baking dish. Perhaps 1 2lb box. Bake in the oven @ 350 for 10 minutes. Longer will make the cheese stiff and less creamy. Let sit for 5 minutes and serve. This is not a science and can be played around with to your liking.

Oh, layered Nachos
Using your favorite chips, lay out closely on a sheet of Aluminum foil on a cookie sheet. Add your favorite shredded cheese, olives, black beans (drained), whatever! Repeat with another layer of chips and cheese. Make sure each chip has a nice amount of cheese. Bake in the oven for 5 minutes or until chesse is melted. A chili mixture can be waiting on the side for the final layer so as not to make the chips soggy! Such a fun treat for movie night or a game!

Take a roll of that Pillsbury Crescent Dough in a can and a block of your favorite cheese (Monterrey jack, cheddar, whatever).

Wrap the cheese with the dough and bake it according to the instructions on the can.

Serve with apple wedges. You cut pieces of the dough/cheese and place it on the apple wedge and eat it. White Trash Bourgeois Heaven!

I love CHEESE too. For the main ingredient, I'd say my beer, cheese, sausage soup. Tons of cheddar and Swiss.

Which I'd like to make today, but I'm out of Swiss and don't have enough cheddar left...because I ate it all!

I wouldnt necessarily say it's the MAIN ingredient but it sure is the star of this one.

Smoky Chicken Fettuccini
6 slices bacon
1/2 cup diced onion
6 large cloves garlic, peeled
1/2 cup coarsely chopped red bell pepper
1/2 cup (2 ounces) grated smoked Provolone cheese
8 ounces uncooked fettuccini noodles, broken in half
1 cup frozen peas
2 cups diced cooked chicken
1 cup half and half
1/2 teaspoon coarsely ground black pepper
1/4 teaspoon salt
2 tablespoons snipped fresh parsley


1.Bring water to a boil in (8-qt.) Stockpot. Meanwhile, cut bacon into 1/2-inch pieces using Santoku Knife. Cook bacon in (12-in.) Skillet over medium heat until crisp. Remove bacon from Skillet; drain on paper towels. Drain grease from Skillet (do not wipe out).
2.Dice onion using Chef’s Knife. Thinly slice garlic using Ultimate Mandoline fitted with thin slicing blade. Coarsely chop bell pepper using Food Chopper. Coarsely grate cheese using Deluxe Cheese Grater; set aside. Add onion, garlic and bell pepper to Skillet. Cook over medium heat 2-3 minutes or until vegetables are tender. Remove Skillet from heat; set aside.
3.Meanwhile, cook pasta according to package directions (see Cook’s Tip). Add peas to Stockpot; carefully drain pasta and peas using Drainer. Add pasta and peas to Skillet. Add bacon, cheese, chicken, half and half, black pepper and salt; toss well to coat. Cook and stir over medium heat until sauce is slightly thickened and mixture is hot. Sprinkle with parsley; serve immediately.

Cook's Tip: A simple way to adjust the consistency of pasta sauce that is too thick is to remove about 1 cup of pasta cooking water using the Nylon Ladle before draining the pasta. Stir a small amount into the sauce as needed.

Smoked Provolone cheese is smoked over applewood for a full-bodied, smoky flavor. Plain Provolone cheese can be substituted for the smoked Provolone cheese, if desired.

You can also take puffed pastry sheets, cut them along the seams after you unfold. The drop brie or gouda and a spoonful of whole cranberry sauce on it. Bake at 350 until golden, 10-15 minutes. YUMMMMMY.
