Making deer summer sausage?

5 days ago I got a deer. It's been dressed, skinned, and quartered. The meat has been hanging for 5 days at 33 degrees. There is some loose hair on the muscle, and the outside surfaces of all the quarters are hard and leathery. I have several summer sausage kits from Cabela's.

Do I put all this in the grinder or do I sort of shave off the leathery hairy portions of the meat first?

You will want to clean up the meat.....I always start by shaving off the "leathery portions"...if you take you time with and are carful you will remove most of the hair in the process....You will also want to trim off the larger chunks of fat.....you don't have to be perfect but you will want to remove the larger pieces. I then run the meat under cold water, to remove the last little pieces of hair that I might have missed.

I always add just a litte beef talo to my meat when I grind it.....some people use port fat....deer meat is very lean...this just helps hold the meat together when you grind it.....then just follow the directions on the box.....

I am glad to hear you wanting to do your own meat....that is a big part of hunting and you will appreciate the finished product so much more if you do it yourself.

I usely rinse the deer off with cold water and a rag or sponge, then I trim off the leathery layer. I also trim all the fat from my deer and add about 10% pork suit.

Clean it up first. The hair will survive the grinder and mess up what could be a fine summer sausage.

Yeah, just leave the hair on the meat. Everyone likes to find hair in their food.
