CHICKEN AND ALMOND SOUP

1 chicken
450g mixed root vegetables (onions, carrots and turnips)
3 sticks celery
10 black peppercorns
1/2 level teaspoon salt
bouquet garni
50g ground almonds
3 rounded tablespoons fresh white breadcrumbs
150ml cream

Peel and roughly chop the vegetables.
Put the cleaned chicken in a large saucepan, together with the vegetables, peppercorns, salt and bouquet garni.
Cover with cold water and bring to the boil over high heat.
Remove any scum from the surface, lower the heat and cover the pan with a lid.
Simmer for 2-3 hours until the chicken is tender.
Lift the chicken from the stock, let it cool slightly before removing the skin and cutting all the flesh from the carcass.
Put the meat in the liquidiser, with the vegetables.
Put the puree in a large clean pan, mix in the almonds and breadcrumbs and stir in about 1,2l of the chicken stock, strained through a sieve.
Bring the soup to a boil and simmer over low heat for 30 minutes stirring frequently.
Before serving, blend half a cup of hot soup with the cream and stir the mixture back into the soup.
Correct seasoning and serve

Debone and remove any skin. Turn burner on medium, pour 4 tbs of olive oil in a non stick frying pan and whisk some spices into the oil. Hopefully you have some paprika in your house, I like that one the best. If you have any garlic (I hope you do), mash one clove up real good and spread that around too. Salt and pepper and any other spices you may like (good ones are chili powder, cumin, curry and anything green like basil or thyme) are also good choices to whisk into the oil. When the oil starts to pop slightly, slowly lower the breasts into the pan. Turn them over quickly to make sure both sides are nice and oily and cook each side until golden. When the inside of the chicken is no longer pink they're just about done. Side veggies that go good with a golden skinless breast are asparagus, green beans and broccoli. If you can get your hands on some small new potatoes than cut them in half and boil them, skin on. This is a healthy dinner that will keep him full and happy. Remember to have half your plate be veggies and the other two quarters be meat and grain respectively.

Pour some orange juice over a piece of chicken in a baking pan, cover with foil, and cook it at 350 degrees for an hour. You don't have to thaw the chicken for this recipe.

Well a very simple way I am advising you as an ameture cook but working as vice president in one of the multinational organization // well cooking is my hobby :

-Take chicken pieces wash them & put it in to the water with what ever vineger you have ( i mean white or brown ).you put two table spoons only in a bowl where you have kept chicken.
After 30 mins put all chicken (except water as you hv to throw that water ) in the pan with little oil // let it be there for 7- 10 mins //keep on rolling the chicken /// see if the chicken pieces become little off white. now Cover the pan for another mins but on the low flame.
-Now take some cardamum ( if u do not have then also ok ) or take any spice you love //put it now with the small onion pieces ( 2 onions are ok for 500 gms of chicken ).
- Let you rotate the stuff for 3 mins // now put tomatoe pure ( 100 gms ) + the ginger & garlic paste + put salt to taste + small qty of turmeric + 2-3 curry leaves or basil leaves or any other spieces you have including pepper.

- Show a little water to the chicken say about 100 ml.

( Put 200 gms of Mushroom pieces if you want.)

- now put 200 gms of cream & let it be on low flame for 5 mins.

TAKE IT OUT IN A BOWL // GARNISH IT WITH GREENS ( WHAT EVER YOU HAVE ) // EAT IT WITH BROWN BREAD WITH BUTTER. TAKE LOTS OF ICEBERGE LUTTCE & RADDISH // PUT SOME SALT & LEMON JUICE ON SALAD.

YOU CAN HAVE WITH BOILED RICE ALSO ( WELL FOR RICE YOU HAVE TO MAKE GRAVY & YOU PUT A LITTLE MORE WATER & CREAM THAN THE NORMAL).

Yuck I hate eating meat too but the rest of the family does. What do you have?? You can put any kind of liquid flavoring on it...terryoki(?) sauce, BBQ sauce.........Put it in a pan and cook on 350 for @45min. My husband also likes it cooked in italian dressing - let it soak an hour or so before cooking.

I guess it all depends on how well you like your husband.... lol!

Just joking.... since you took the time to ask the question I'm going to guess that you are trying to please him. Therefore, you can place the chicken in an oven safe dish... sprinkle with herbs & seasonings and bake.

Another great and easy way to prepare chicken is to place the chicken and some veggies on a large sheet of foil. Fold foil to make a packet and then slide onto a cookie sheet and bake.

Here's a website to help with the "foil packets/pockets" idea:

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

If you have light Italian salad dressing at home. you can marinade the chicken it that for a few hours then grill it or heat in a frying pan. I also like to heat chicken in a frying pan w/ mushrooms, onions, white wine, black olives and canned tomatos *asparagus also if I have it in the house*. You shouldhave most of that already at home.

I'm not sure what you have at home so you don't have to go to the store but I would suggest Cajun Chicken. Go to Yahoo Food, and look up some recipes, they have a lot of easy ones.
