My daughter has worked on commercial sets for fast food and the food IS real, but it has been enhanced...and the 'steam' you see coming off the food is made by machines...glue is added to cake frosting to make it peak higher on TV, marbles are added to mashed potatoes to make them look more real...only the longest, fattest, best french fries are used...
The reason the actors don't swallow the food is because it might take 20, 30, 100 takes and who wants to eat 100 bites of a burger??

Can't answer the second part of your question, but due to the high heat of the lights there are trade tricks that are used to make foods in commercials look like the food being advertised- Ice cream is usually a hard shortening, that perfect Thanksgiving turkey is mostly raw and painted with a browning sauce, ie. Kitchen Bouquet, then the slices are steamed with a commercial laundry steamer used to remove wrinkles from clothes. There are also people who are hired to "dress" food. That's why the hamburger in the commercial at any fast-food joint doesn't look like the one in the ad.

This is somewhat true. The actual item being advertising must be the actual product legally. For example if you are advertising a chocolate syrup, you must use the chocolate syrup you are selling. However the "ice cream" it is being put on could be mashed potatoes or shortening.

Some food is edible, some isn't. I knew a food stylist once who said they put Elmer's glue in the milk for a bowl of cereal to make it look more appetizing. Fruits and veggies are hosed down with shellac to make them shiny.

Yes they are props I was once told they use mashed potatoes for butter and ice cream commercials cause the lights on set are so hot the butter or ice cream would melt before the commercial was taped.
