I know someone learning photography and I want to give them a bok all about great photographs. Not a "how to" guide because they are already learning about it - I'm looking for inspiring examples of why they should keep it up!

Take a look at "Spirit of the Wild" by photographer Steve Bloom.
He also has a website where you can see examples of his work.

I'm going to break your "how to" rule but only a little. I have a book called "Understanding Exposure" that is one of the best photography books I've ever had. It is both a "coffee table" book in that is has outstanding full page photos and it tells something about how those images were captured. The images in the book have inspired me to try and capture similar scenes and the information has helped give me the tools to make that possible. For example, I have gotten up at 5:00am to get a picture of a waterfall at sunrise and spent evenings on the edge of a canyon to try and capture a landscape with just the right light and I would have done none of that if I hadn't read this book.

There is an older book called "The Family of Man" from an exhibit by the same name. The photographs are from all over the world and mostly in black and white. Awesome, amazing images.

"The Family of Man" great example
Collection works of Cartier-Bresson, Winongrand, beauty in real life, that's what inspires me. Believe it or not Al & Tipper Gore put a compilation called "The Spirit of Family" that I found amazing as well.

Dan Eldon - The Art of Life

This journal is more about reasons for being a photographer.

It includes parts of his journals/images leading up to his death in Somalia in 1993.

The Sebastião Salgado book about work. He's a master of the burnished, pared photographic image.
