We only could get the late sitting (8PM) but have a 2 yo and a 3 yo. 8PM is way too late for them to eat. What do people in our case do? Are there other places to eat on the ship? Do we have to eat in the main dining room?

I have not done a disney cruise, but I've been on 2 with carnival, plus one on other line. There was always food available besides the dining room. We could walk in at any time and get something. One of the Carnival lines had a pizza grill that was open 24 hours. Check with your travel agent or the cruise line to find out for sure on your trip.

The exception to this was at the captain's dinner, usually about thursday night. Then EVERY PLACE that served food shut down, except for the dining room. This was the night that you were expected to tip the matre'd, the waiter, the busboy, the chef, the room steward, his assistant, the captain, the guy who polishes the anchor, and every one you ever saw wearing a uniform of some sort. They had suggested amounts which added up to more than $300-400 in all.

I've gone on two Carnival cruises and at the last one (a few months ago) they have done away with that "tip night" dinner thing. So that shouldn't be a hassle anymore.

As to the actual question, yes, there is plenty of food 24 hours a day. The formal dinners are a bit of a hassle and I only went to I think 2 of them per cruise cause I didn't want to get that dressed up when I could just go to the huge buffet in my swimsuit...or order free room service...

No, you don't have to eat in the main dining room, granted it's very nice, but they have other places to eat.
You should be able to go to Disney cruises and look up everything you need to know.
