There are two popular methods to doing this, both require the use of an absinthe spoon, which is a large spoon with open slots in it, allowing liquid to pass through. In a pinch, a large fork can work as well.

Method One: Louching

Pour shot of absinthe into glass, place spoon over top and place sugar cube on spoon
Pour cold slowly water over sugar cube, when the water hits the absinthe, it releases oils that turn the drink a milky white.
Be sure to be sitting down..and drink!

Method Two: Flame method

Take a reasonably sized spoonfull of sugar, or sugar cube and briefly dunk it in your glass of absinthe.
Light absinthe/sugar on fire and hold over glass, the burning alcohol will melt the sugar into the glass.
When the fire gets low, stir the remaining sugar into the glass and drink

+ Pour a couple of ounces in a small size glass. Place a screen over the top and place a sugar cube on it. Get a big glass full of ice and a strainer top on it. Let the ice melt drip by drip onto the sugar and into the glass to melt the sugar. When the sugar is melted into the glass it is ready to drink. (that is the classic absinthe cocktail) I like to just add about an ounce to a cup of strong coffee for the nice aroma.
Don't drink too much as it is hazardous

If you mean "Absinthe" it is meant to be a digestive, that is, something you sip on after a large meal to help settle your stomach. So, straight up or over a cube or two of ice would be the correct way... WARNING... I was at a Christmas party last year where people were pounding shots of the stuff and it got really ugly. That stuff is too potent to bang back like that. I've heard of people hallucinating from it.
