I love the below, especially if the toast is cooked over the fire....

Garlic Mushrooms on Toast
Ingredients

tasty mushrooms
olive oil
parsley
bread
garlic

Prepare the mushrooms and then chop them into chunks. Finely chop the garlic. Warm some oil in a frying pan and add the garlic and mushrooms. Fry the mushrooms until golden brown and then tip into an oven proof dish and keep warm in a moderate oven.

Using the frying pan add some more oil and fry the slices of bread in the pan. When one side is cooked sprinkle some finely chopped parsley over the bread and turn it over to finish off. Lay the bread, parsley side up, on a plate and spoon the mushrooms over it. Drizzling any remaining juices from the pan over the top.

My speciality Bangers and Mash:

1 pack of Taste the Difference Sausages (any variety - Pork and apple best) grilled and served with homemade mash of sweet potato, butternut squash and carrots. (Add a little butter, creme fraiche and Encona hot sauce). Drown in luscious homemade onion gravy using white and red onions, garlic, balsamic and red wine vinegar, glass of red wine, brown sugar. Serve with Parsley and lots of wine. Had it on Sunday with boyfriend. Always good to use your own judgement with measures and improve on it every time. Its one of the best things I've invented!!!

Marshmallows in chocolate or strawberry dip. You could make them melted or fried on the fire. It'll just be like the old times' camping out!
