Your mom may have put a little sugar in her spaghetti sauce, after all. If you have ever cooked a homemade sauce, you know that the tomatoes contain a lot of acid. Putting a little sugar in the sauce cuts down on the acid to give a smoother flavor.
The thing is, though, many commercially made tomato sauces over compensate by adding sugar or dreadful corn syrup to imitate this cooking style. I know since I've been testing my blood sugar with a glucometer. After eating commercially made sauces, my blood sugar is very high.
A good tomato sauce is fairly simple to make. Throw some minced garlic, onions, extra virgin olive oil, and whatever seasonings you like in a hot
pan, sweat, then put in either fresh chopped tomatoes or canned crushed pear tomatoes. You don't even need sugar if you simply add a little tomato paste to the mix. cook slowly for a few hours, stirring occasionally, and you have a simple, yet delicious tomato sauce.

A lot of poeple actually add a bit of sugar to their sauce. Personally, I don't. But, the method of thinking is that it cuts down the acid from the tomatoes and sweetens the sauce to a better flavor.

I wonder if it is to cut down on the bitter-sour taste the tomato creates. I grew up with lots of Italians and they always put a little sugar in their sauce. I wish I had my mother's reciepe also!!

because when you cook sauce at home, you let it cook to cut the acidity of the tomatoes. adding sugar is just the lazy way to speed up the process of letting the tomatoes release their acidity. the ONLY way to make good sauce is time...sugar is a quick fix.
