Easy Ranch Biscuits

These ranch biscuits are easy to make with refrigerated biscuits, ranch style dressing and Parmesan cheese.

INGREDIENTS:

1 can of Butter Flaky Biscuits
Ranch Dressing, prepared
grated Parmesan Cheese

PREPARATION:

Separate each biscuit and flatten slightly. Dip one side of each biscuit in bottled Ranch Dressing, then same side in Parmesan Cheese. Fold in half. Place biscuits in a greased pan, fold side down. Bake at 375 for about 30 minutes. Sprinkle more Parmesan over over biscuits before baking.


Cornmeal Biscuits

INGREDIENTS:

1 1/2 cups all-purpose flour, sift before measuring
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup yellow cornmeal
1/3 cup shortening
2/3 cup milk

PREPARATION:

Into a mixing bowl, sift together the flour, baking powder, and salt. Stir in cornmeal. Cut in shortening until mixture resembles coarse meal. Add milk; stir just until dry ingredients are moistened. Knead about 20 times on a floured surface.
Roll out about 3/4 inch thick then cut with a 2-inch biscuit cutter. Place on baking sheet. Bake at 450° for 15 minutes.
Makes 12 cornmeal biscuits.

SOUTHERN BISCUITS

2 cups flour + flour for rolling board
4 teaspoon baking powder
1 teaspoon salt
1 teaspoon sugar
2 tablespoon shortening*
2/3 to 3/4 cups milk

1. Preheat oven to 450 degrees.
2. Mix the flour, baking powder, salt and sugar together.
3. With a knife or a pastry blender, blend the shortening into the flour mixture until dough looks like small balls.
4. Slowly add milk while you stir the dough with a fork until the balls have softened into a dough that you can roll. Stop adding milk before the mixture gets sloppy. It needs to be firm enough to roll.
5. On a lightly floured board, roll out the dough until it is about a 1/2 inch thick.
6. If you have a biscuit cutter, cut out 12 circles with it. If not, flour the rim of a glass and use it to cut the biscuits.
7. Place the biscuits on an ungreased baking sheet.
8. Bake for 12-15 minutes, until the outside is golden.
9. Serve with butter or bacon.


SOUTHERN STYLE CHEESE BISCUITS

1 cup Milk
1/3 cup Mayonnaise (not low fat)
1 tablespoon Sugar
2 cups Self-rising flour
1/4 cup shredded American cheese
1/2 teaspoon Garlic powder
3 tablespoons Melted butter or margarine
Muffin paper liners

In a 1 1/2 qt mixing bowl combine the milk, mayo, sugar, and flour. Beat on high speed with electric mixer for almost a minute, until smooth and completely combined. Using a rubber bowl scraper, streak the dough with the cheese.
Batter should not be thin enough to pour; if necessary, add only enough additional flour so batter will "drop" from spoon. Drop batter into 10 paper-lined muffin tins, or a greater number of tiny muffin cups. Fill about 1/2 full Melt butter; mix in garlic; lightly brush tops of dough. Sprinkle a little additional cheese on each muffin, if desired. Bake at 375° for 15 to 20 minutes, or until golden brown. Cool in pan on rack; serve hot.

Buttermilk Biscuits

2 C Martha White all purpose flour
2 teaspoons baking powder
¼ teaspoon soda
¾ teaspoon salt
¼ cup shortening
1 cup buttermilk

Mix well all dry ingredients. Cut in shortening until mixture resembles very coarse crumbs. Add buttermilk and mix well but lightly. Turn out onto lightly floured surface. Knead lightly just until smooth. Roll to about ½ inch thickness. Cut with cutter to desired shape. Place on lightly greased sheet and bake at 450° for 10-12 minutes. Makes about 12 biscuits.

For regular biscuits, use recipe above, omit soda, increase baking powder to 3 teaspoons. Use about ¾ cup of regular milk.

Angel Biscuits

2½ cups flour
2 tablespoons sugar
1½ teaspoons baking powder
½ teaspoon soda
½ teaspoon salt
6 tablespoons shortening
1 pkg. dry yeast
2 tablespoons warm water
1 cup buttermilk
½ stick butter melted

Dissolve yeast in warm water. Mix all dry ingredients. Cut in shortening until mixture looks like coarse meal. Add yeast mixture and buttermilk. Roll out and cute into shapes for biscuits. Dip in melted butter and place on baking pan. Let biscuits rise slightly, then bake at 400° for about 15 min. Biscuits can be refrigerated or frozen until ready to use.

There is a good recipe on foodnetwork.com by Paula Deen that I use. It is listed as southern biscuits. Real simple and easy. I use it all the time.
