leave out everything but salt and pepper a hamburger should only be meat. Bread Crumbs and all that other crap are for making meat balls or meatloaf.
Dont use total ground sirloin, Use at least a 80% fat ground sirloin/ground chuck mixture, salt and pepper, Shape it (don't over work the meat, or compress it heavily). make your patty and dont flip it or mess with it for a few minutes when you start cooking it

Hamburger meat, seasoning, onion, 1 egg, 1-2 pieces of torn up slices of bread. Yummy! This is the same to make meat loaf...the bread and egg holds it together.

We used bread crumbs or, wonder bread slices all crumbled up and mixed in the ground meat. Adding a cup of milk in addition to the eggs helps too.

I would not use flour but the egg is ok. I only add seasonings and sometimes onions. The hamburgers never fall apart. Make sure your heat is high also. Sometimes you can cook them too slow,which can cause your meat to separate.

You need to mush the mixture together in your hands, I mean really squeeze it so that it is squiishing out through your fingers. Do this for a few minutes, then form the beef into patties. This has always worked for me

I usually don't use anything when I make hamburger patties. They will hold together if you work them in the palm of your hand.
It is good to season them and add chopped onion.

no flour......use egg but you need to really kneed the egg in really good. also......put the patties in the oven a while instead of on the top of the stove so they will cook a little all the way around without you having to flip them and break them up too much
