Cut the shell down the center on the under (flat) side just to cut through the shell not to go through the meat (use kitchen shears). You can then fold each side back and the meat will pop up when cookd. Yes, you can cook it in the shell or not.

you boil the lobster tail until they turn bright red like about 8 minutes. It doesn't pop out on it's own you turn the tail upside down red side down. Then you cut it lenthwise right down the middle of the clear carliladge shell from the tip of the tail to the end and pry the meat out. You have to pull each side and break it sometimes. Be aggressive!

Just put it in simmering water until the shell turns red.

Let the shell on and after it is cooked, cut the shell with a knive and the meat will easily slip out.
