Hebrew was originally written without vowels. Nothing written had vowels. Since the root consonants didn't change, the vowels and meaning were inferred from context. The name of God, YHWH, or JHVH depending on how you transliterate it, was just like every other word, only it was not to be pronounced out of respect for God. Much later, when Hebrew was not the common language anymore, scholars felt the need to clarify pronunciation and meaning by adding vowels around the letters of scripture so as not to obscure the original lettering. That's why the vowels look like dots and dashes.
As a matter of fact, the name Jesus DOES appear in the Hebrew Bible, but it is referring to Joshua, the successor of Moses. It was originally spelled without vowels, like everything else. However, there is no prohibition against pronouncing that name. Even God's generic name, El (or Elohim) is okay. Only YHWH is avoided. The word "Lord" ("Adonai") is substituted. In Bibles with vowels, the vowels of Adonai are added to the name, JHVH, producing the nonsense word, "JaHoVaH", which reminds the cantor to substitute.

Not having a copy of the Torah at hand. to check for sure. I don't think the Name Jesus appears until the New Testament. The Jewish people still use the Old Testament as they don't believe that Jesus was the promised Messiah.
just a difference in language spelling and pronunciation. The Bibles in western Europe have been mostly translated into Middle English. The Newer ones in America are in American English.

I'm not sure what they do when they come to the word Jesus. I don't believe the name of Jesus is in the OT. I'm sure I'll be corrected if I'm wrong. I know the name of God, some leave out the "o" and I've been told that it is out of respect and reverence to God. I may be wrong. But I do know that the original text in Hebrew had no vowels. They were implied.

Joshua or Yeshua is the Hebrew name for Jesus. The Hebrew alpahbet has 22 letters and vowel signs are used around the consonants to give the reader the pronunciation of the words.

Jews do not have the New Testament. Jesus is not even part of their religion. The word you are speaking of with no vowels is God's name and is suppose to be unspeakable.
