If a recipe calls for alcohol...how much more can I add without messing up the consistency of the food.?

Use exactly what is recommended otherwise it might be either too messy or too dry. If you want more alcohol, use a higher alcohol content.

The recipe will tell you how much and what kind of alcohol to add such as rum, brandy, whatever. The alcohol cooks off but the flavors of the alcohol is why the recipe calls for a specific type of alcohol.
