Peanut Butter Cup Cookies
INGREDIENTS
1 3/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup peanut butter
1/2 cup packed brown sugar
1 egg, beaten
1 teaspoon vanilla extract
2 tablespoons milk
40 miniature chocolate covered peanut butter cups, unwrapped
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Sift together the flour, salt and baking soda; set aside.
Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well.
Shape into 40 balls and place each into an ungreased mini muffin pan.
Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan

Peanut Butter Cookies
INGREDIENTS
1/2 cup shortening
1/2 cup peanut butter
1 cup white sugar
1/2 teaspoon vanilla
1 egg
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In medium bowl, cream together the shortening, sugar and peanut butter. Beat in the egg and vanilla. Combine the flour, baking soda and salt, stir into the creamed mixture until well blended. Roll the dough into walnut sized balls. Place the cookies 2 inches apart onto the cookie sheets. Press balls down using a fork dipped in sugar water.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1 cup margarine
3/4 cup white sugar
3/4 cup packed light brown sugar
2 eggs
1/2 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees C).
In a large bowl, cream together the peanut butter, margarine, brown sugar and white sugar. Beat in the eggs and vanilla. Combine the flour, baking powder and baking soda; stir into the peanut butter mixture. Form dough into walnut sized balls and place them 2 inches apart onto ungreased cookie sheets. Dip a fork into flour and criss cross each cookie to flatten slightly.
Bake for 12 to 15 minutes in the preheated oven, until just lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely

EASY PEANUT BUTTER COOKIES

1 c. sugar
1 egg
1 c. crunchy peanut butter

Mix ingredients well. Roll into 1 inch balls. Place on ungreased cookie pan. Press with back of a fork. Bake for 8 to 10 minutes at 400 degrees. (Another easy recipe for the kids.) No - we did not forget the flour, etc. all you need is those 3 ingredients!

I got this on off of yahoo answers last week. My kids made them Friday night & used red & green sprinkles for the holidays
1 cup peanut butter (your choice, smooth or chunky)
1 cup granulated sugar
1 large egg
sugar, for rolling (optional)
Mix together until smooth.
Drop by teaspoon onto cookie sheet two inches apart. If desired, roll in extra sugar before placing on cookie sheet.
Press with fork and press again in opposite direction.
Bake 10-12 minutes at 350°.
Do not brown, do not over bake.

you can try this... :') Not too dry, not too sweet, and very peanut-buttery.
cooking time:32 min 20 min prep
ingredients:
3/4 cup peanut butter
1/2 cup butter or margarine, softened
1/2 cup brown sugar, firmly packed
1/2 cup granulated sugar
1 large egg
1/2 teaspoon vanilla
1 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
granulated sugar
procedures:
In medium mixing bowl beat together peanut butter, butter, brown sugar, 1/2 cup granulated sugar, egg and vanilla until creamy.
Blend in flour, soda and salt.
Cover. Refrigerate at least 1 hour.
Form dough into 24 balls, each about 2-inches in diameter.
Arrange about 2-inches apart on two cookie sheets.
Flatten with fork dipped in granulated sugar to form criss-cross pattern.
Bake in preheated 325°F degrees convection oven on racks 2 and 4, 10-12 minutes (or bake in preheated 350° degrees radiant bake oven 10-12 minutes) or until light golden brown.
Cool on wire racks.

Here's my pb cookie recipe
1/2 cup peanut butter ( I increase to 3/4 cup)
12 cup butter
1/2 cup sugar
1/2 cup brown sugar, packed
1 egg
1 tsp vanilla
1/4 tsp salt
3/4 tsp soda
1 1/4 cup flour

cream butters, sugars and egg blend in vanilla sift in dry ingredients. preheat oven to 375 roll cookies into 1/2 inch balls and smash with a fork. bake 7-9 minutes. these will stay soft if you don't overbake

Go to bettycrocker.com. I have used this recipe for years. It is simple and my family loves the cookies. My sis-in-law loves them so much,I send them to her in LasVegas every year for Christmas.
