Both.
I shoot film Nikon. Digital Canon.
Both have killer cameras. Nikon just feels better in my hands, though. I switched from Canon SLR to Nikon years ago.
Canon has a slight edge on high ISO. Nikon seems to handle color better. Your choice. Both and either make great cameras and accessories, and some that ain't too great as well.
Either way you go will be fine.

Nikon is fabulous for film photography, but Canon has the market on digital. I was a imaging specialist at a Circuit City, and saw several professional photographers upgrade to a canon slr from a nikon slr.
I personally had a 3.2 megapixel canon powershot A75 that took clearer brighter photos than the 6 megapixel Nikon coolpix.

Which is better? Chevy or Ford? Porsche or BMW? Mercedes or Lexus? Nikon or Canon? These are all unanswerable questions as they are all "the best" in their class, depending who you ask.
If you have no personal preference, perhaps you would do best by going with the recommendation of your local camera shop pro or a friend who has something that he/she likes. If you have someone who is willing to help you learn how to use a particular camera, add ten points to that brand in your decision making process.

Not a very good question. It'll be better if you give us a few specific models that you want to compare with.
In general, Canon is more popular in the point and shoot market compare with Nikon (thanks to Canon's marketing department). However, once it comes to DSLR, they are really neck to neck. I guess no one can really say which one is better as both of them make high quality DSLR.

I can answer your question with experience of both.
I have had the Canon 350d, 300d and 10d and none of them, I mean none of them compare with the Nikon D70, D80 or D200 for quality and sharpness of image.
For ease of use maybe the Canon has the edge.
