I was noticing today at breakfast that my coffee taste different after taking a bite of my muffin. Like there was no sweetness to it. Why is that?

There are five taste sensations: Sweet, Bitter, Savory, Salty and Sour - all located on the tongue. These work through chemical receptors. When you eat/drink something sweet it sends signals to the brain which are interpreted as "sweet". These sweet receptors can only send so many strong signals to the brain before the signals become weaker. So, the Coke you drink after the candy bar doesn't send a strong "sweet" signal. Hence it is not perceived to be as sweet as the candy.

Take a drink of an alcohol drink, eat something, and then take another drink. Same effect. You are cleansing your pallet with the food.

The reason is that your taste buds were sensitized by the sugar and had not yet recovered from the sensation. Sometimes our nervous system is rather slow.

Your taste buds are overwhelmed by the sweetness of your muff and therefore dulled to the coffee.
