Bacon.
This recipe for a colorful kale soup is quick and easy to prepare using fresh or frozen kale, potatoes, bacon, onions, red kidney beans and carrots. A wonderful cold night supper recipe.
INGREDIENTS:
2 T. olive oil
2 slices bacon, cut up
2 large onions
3-4 cloves garlic, minced or mashed
6 C. water (or part chicken broth)
8 cups well washed and chopped kale; remove the toughest stems (or buy frozen)
1 - lb. chopped potatoes
1 C. chopped carrots
1-15 oz. can dark red kidney beans
1/2 lb. smoked sausage thinly sliced
salt & pepper to taste
PREPARATION:
In a large heavy kettle brown onion and garlic lightly in the bacon and olive oil. Add kale and sausage and put on lid to wilt down for 10 minutes. Add remaining ingredients, cover and simmer 30-45 minutes. Good in crock pot too.
Serve with a splash of vinegar or hot sauce and corn muffins or crusty bread. Wonderful cold night supper!

I can't find any where I live either. So I looked for a recipe and Emeril had one. I would try it if I were you.
LINGUISA SAUSAGE
Ingredients needed:
2 tablespoons salt
1/2 tablespoon sugar
2 tablespoons fine chopped garlic
2 tablespoons red wine or cider vinegar
2 tablespoons paprika
2 teaspoons ground pepper
2 teaspoons marjoram or oregano
5 pounds pork butt
Rough cut meat, add dry spices and grind on 3 1/6 plate. Let sit overnight in cooler. Then next day add vinegar and mix well. Stuff into casing. Roast in oven or smoke, or make patties and pan roast.
Suggestion: I had them grind the butt for at the meat counter. Take it home and add the spices then. Hope you can find casings. Believe me it's worth makng your own.

i am Portuguese an make kale soup all the time. but after moving to Florida chorice an linguisa is hard to find but you can do a few things ask your local grocery store if they can fly it in Micheal's in fall river mass ships any amount to any place for a reasonable fee. or get some salted pork from the store an sub chorice or linguisa for it but be sure to add some paprika an a little garlic to the soup to bring out the taste

Try a ground pork and mix chili,cumin and cayenne with some black pepper and mix it in real well then fry, it won't be the same, but you'll get the spice flavor. I would call around to my grocery stores. So many of them, have a section devoted to hispanic foods,now I usually find chorizo or linguiso in most stores.
