Smoked Salmon Bites
16 oz Smoked Salmon
Melba Toast or thin wafer crackers
8 oz cream cheese, softened
1 cucumber, thinly sliced
1 red onion, finely chopped
capers, if desired
1. Spread cream cheese evenly over crackers.
2. Place slice of salmon on each cracker.
3. Garnish with cucumber, red onion and capers.

Pesto Smoked Salmon Bites
1 French crusty bread stick, sliced
1 cup [250 mL] chopped smoked salmon
Pesto
1 1/2 cups [375 mL] olive oil
1 to 1 1/2 garlic cloves, finely minced
1 cup [250 mL] freshly chopped basil
Pine nuts
Salt and pepper
Prepare pesto.
Toast slices of bread in oven.
Spread each slice of bread with pesto.
Top with chopped smoked salmon, and serve.
Pesto
Into a food processor or a blender, puree together olive oil, garlic, basil and pine nuts.
Salt and pepper, to taste.

Hors deOuvres ideas:
You could do some dips or lay out a really nice cheese plate (not cheddar cheese cubes) with toasted crusty bread.
Baked Brie and fruit
Puff pastry tarts filled with caramelized onions and gouda are super awesome!
Bacon wrapped scallops or shrimp are popular
Gourmet olives, you can even serve these warm

"Smoked Salmon Canapes" - 25 canapes
2 (3 oz.) pkgs. cream cheese; softened
2 tsp. prepared mustard
25 Canape Toast Bases (below)
1 (3 2/3 oz.) can smoked salmon; drained
Parsley
Blend cream cheese and mustard; spread part of mixture thinly on canape bases. Place piece of salmon on each canape; top with dot of remaining cream cheese mixture. Or, if desired, pipe all the cream cheese mixture around base. Top each canape with sprig of parsley.
CANAPE TOAST BASES:
Skillet Method: Remove crusts from slices of sandwich bread. Cut each slice into 4 squares or cut with round, star or other shaped cutter. Melt small amount of butter or margarine in skillet; toast bread cutouts in skillet over low heat until brown on one side. Just before serving, spread untoasted side with desired spread.
Broiler Method: Set oven control at broil and/or 550*. Remove crusts from slices of sandwich bread. Cut each slice into 4 squares or cut with round, star or other shaped cutter. Lightly brush one side with melted butter or margarine. Place 3 to 4" from heat; toast 3 to 4 minutes or until golden brown on buttered side. Just before serving, spread untoasted side with desired spread.
