We have red potatoes in our fridge that have been sitting in their for about 7 months... they still look okay, but we are rather scepticle...

When in doubt throw them out. You should not store potatoes in the fridge. They should be kept in a cool dark place with plenty of ventilating. The ideal storage temperature is between 45 and 50 degrees. Potatoes will keep for several weeks at these temps. Storing your potatoes in the fridge causes the starches to turn to sugar and the potatoes will develop a sweet taste and turn black when cooking them. You refrigerator should be kept below 40 degrees. You can store potatoes at room temp, but they shoudl be eaten within a week or so.

as they give off a gas and will sprout the potatoes
7 months sounds like a long time
but remember most potatoes are stockpiled for a long time in cold storage.......

They should be fine cut one open and smell it. Have they grown a lot of new eyes. They might be a little strong to the taste. Other than that I don't see a problem.

hey if they look ok then they are ok. i keep potatoes all fall and winter never buy potatoes because i grow them
