Most Catholics will date non-Catholics. If he is a practicing Catholic he will probably want you to learn more about Catholicism and if you get married possibly become Catholic.
I think Catholics are very open minded to other religions. I think (and observed) that Catholics show their faith instead of evangelize. Most Catholics I know will talk religion with only those that are truly open to listening and not condemning other religions.
This website will give some understanding:

There are classes at Catholic churches called RCIA, and it is looking into becoming Catholic.
When looking for a book about Catholicism, read something that is written by a practicing Catholic. Some ideas are:

Yes, there is a "Catholicism for Dummies" book. There's also one called "An Idiot's Guide to Catholicism" but don't rely on that one; it has a lot of inaccuracies about our faith.
As for Catholics dating outside of our religion, it's not encouraged but it's by no means forbidden.
So, there's no "rule" saying that this man can't date you just because he's Catholic and you're not.

Both of my non-Catholic brothers married Catholic girls so many Catholics do date/marry outside of their faith.
PS: There really is a 'For Dummies' book on the subject!

Catholics date outside of their religion all the time. Your best bet is to see if he has a Catechism. If not just read the Bible. You should read the Bible anyway.
