My seven-year-old really loved helping me make these.
Zimtsterne (Cinnamon Stars)
3 tablespoons butter or margarine
1 ½ cups sugar
2 whole eggs
1 egg, separated
1 teaspoon lemon juice
2 1/3 cups all-purpose flour
2 ½ teaspoons baking powder
1 ¼ teaspoons cinnamon
¼ teaspoon nutmeg
½ cup finely chopped walnuts
Heat oven to 375 degrees. Mix butter, sugar, 2 whole eggs, 1 egg yolk, and lemon juice until fluffy. Measure out flour. Stir dry ingredients together; blend into sugar mixture. Stir in nuts. Roll dough, 1/3 at a time, to 1/16” thick on lightly floured board. Cut with a star cutter. Brush tops of cookies with remaining egg white beaten until frothy. Bake on lightly greased baking sheet 6 to 8 minutes. Makes 6 to 9 dozen cookies, depending on size of cookies.

BLACK WALNUT POUND CAKE
2 sticks butter
1/2 c. shortening
3 c. sugar
5 eggs
1 c. sour cream
1/2 tsp. baking powder
3 c. cake flour OR plain flour
1/2 c. milk
1 tbsp. vanilla flavoring
1 tbsp. black walnut flavoring
1 c. black walnuts, chopped
Cream butter and shortening. Add sugar and cream together. Add eggs 1 at a time, beating well after each. Add sour cream and mix together. Add baking powder to flour, alternate flour mixture with the milk. Add flavorings and mix well. Mix in chopped black walnuts by hand. Pour into a greased and floured 10 inch tube pan. Bake at 325 degrees for 1 hour, turn down oven to 300 degrees for 30 minutes more.
Frosting: Black Walnut Frosting.
BLACK WALNUT FROSTING:
1/2 stick butter
4 oz. cream cheese
1 tbsp. black walnut flavoring
1 box powdered sugar
1/2 c. black walnuts, chopped
Milk, if needed
Cream butter and cream cheese. Add flavoring and powdered sugar. Mix nuts in by hand. Mix well. Put on cooled cake.

GREEN BEANS WITH WALNUTS
2 pounds fresh green beans, washed and trimmed
2 tablespoons butter
1 cup chopped walnuts
2 tablespoons walnut oil
2 tablespoons minced fresh parsley
ground black pepper to taste
salt to taste
Place the walnuts on an ungreased baking sheet. Bake at 350 degrees for 5 to 8 minutes.
Cook beans in large pot of boiling salted water until just tender, about 5 minutes. Drain. Rinse beans with cold water, and drain well. Can be prepared 6 hours ahead. Let stand at room temperature.
Melt butter or margarine with oil in heavy large skillet over high heat. Add beans and toss until heated through, about 4 minutes. Season with salt and pepper. Add walnuts and parsley and toss. Transfer to bowl and serve.
HEDGEHOGS
INGREDIENTS
2 cups walnuts
1 cup dates, pitted and chopped
2 cups flaked coconut
1 cup packed brown sugar
2 eggs
Grind nuts and dates. Mix 1 1/2 cup coconut and remaining ingredients.
Scoop up in tablespoons, shape into balls and roll in remaining coconut. Bake on ungreased cookie sheet until coconut browns, 10 to 15 minutes, at 350 degrees.
REMARKABLE FUDGE
1 cup butter
12 ounces semisweet chocolate chips
1 (7 ounce) jar marshmallow creme
1 cup chopped walnuts
1 teaspoon vanilla extract
1 1/4 cups evaporated milk
4 cups white sugar
Line a 13x9 inch baking dish with foil and butter the foil.
In the top half of a double boiler combine the butter or margarine, evaporated milk and sugar. Cook on medium heat for 12 minutes or until it reaches a temperature of 236 degrees. Remove from heat and stir in the chocolate chips, vanilla and marshmallow creme. Stir until chocolate chips melt then mix in the chopped walnuts. Spread mixture into the prepared pan. Score into squares while still warm. Refrigerate until firm then cut along the scored lines.

I don't know why people always talk about and use walnuts more at christmas time. i like them all year long, just like i do turkey even though its not thankgsgiving everyday, and thats when most people eat turkey.
i like freshly cracking walnuts and eating them though, none of that pre cracked stuff.
