chicken salad:
1 red (bell) pepper - deseeded and diced
1 yellow (bell) pepper - deseeded and diced
1 courgette (zucchini) - diced
2 shallots - finely diced
handful chopped spring onion (scallions)
half handful chopped coriander (cilantro)
a few chunks bufallo mozzarella
sun dried tomatoes
mixed salad leaves - rocket, watercress, mache, frizze and lollo rosso are all good
sweat shallots slowly in a pan with a little oil, throw in rest of diced ingredients and cook for 5 mins. add diced cooked chicken, warm through, add bufallo mozzarella, continue heating until just starting to melt, then remove from heat and add to salad leaves.
season with rock salt and plenty of cracked black pepper, drizle with olive oil or your favourite dressing and serve!!
PS - damn you americans and your crazy names for stuff. its CORIANDER not cilantro!!!

Try adding Italian Salad Dressing instead of the mayo. That's what I do and I love it.

Use your regular chicken salad recipe, but moisten it with any good salad dressing of your choice -- honey French is very good, as is ranch, raspberry vinagrette, or honey mustard.
Each one will give a slightly different taste, but each is good in its own way.

HERES SOME GREAT ONES
CHICKEN WALDORF SALAD
1 unpared red apple, diced
1 tbsp. lemon juice, sprinkled over apple
2 c. coarsely diced chicken
1 c. halved red grapes
1 c. diced celery
1/4 c. chopped onion
1/4 c. broken walnuts
Salt & pepper
Mix and chill. Serve in lettuce lined bowl. Slice or wedge hard boiled egg. Grate yolk in center so it looks like a flower.

Corriander is the SEED (spice) and cilantro is the HERB (leaf) part of the plant. Two different things from the same plant.
