when buying eggs in a supermarket they are always on the shelf and not in the fridge, so why then do they have a message on the box saying keep refridgerated?

Contrary to the previous answers eggs are not kept in refridgeration units in supermarkets nor do they need to be kept cool upon purchase. However, they will last longer when stored in a cool place i.e. the best before date.

If you will notice that shelf in the store is also a refirgator. It is just open so the supermarket can display the products. Notice next time you are in the store the "shelf" and the area around it is cold.

Given the reference to beer, wine etc I believe you are referring to "craic". That is something we irish practice on a regular basis. Certainly it can involve an alcoholic bevearge or two and a good mixture of humour, music, conversation, mutual respect and then another few pints of the black stuff.
I've just had an evening of it and mebbe that's why I think your question has nuttin to do wid eggs.

I think they just say keep refrigerated because it will help the eggs keep longer after buying them! You don't have to keep them refrigerated; you can just keep them in a cool place in your home. But it is better to keep them in the fridge, at least that way they stay at a constant temperature.

I like it when packs of nuts says "this product may contain nut traces"!! What's that all about?? Obviously it contains nut traces - they're nuts!!

They break more easily when they are cold so by keeping them cool but not refrigerating them the supermarket is making a balance of economy between breakages and shelf life.

Maybe you should stop buying from this store. In the store I shop at the eggs are in the milk section, under refrigeration.

I don't think it really matters. I keep mine in a cupboard and have never had any problems after all when they are laid they are warm and how long are they left unfridgerated before they are collected?

eggs shouldn't be in the fridge, they absorb all the food smells and flavours through their porous shells.

because they don't like to be chilled then unchilled(on the way home with you) then re chilled in your fridge. Speeds up their use by date
