Local newspapers are a good way to get the word out. Local news, and radio stations are often helpful as well. Send a letter with information about you and what you're trying to do including details about the type of volunteer work you'll be doing and who the recipients of your activities will be. Be sure to include details of the organization for whom you will be volunteering, proof that the organization will accept you, and how much it will you cost you to go to South Africa and live there for the amount of time you plan to stay. People will be much more willing to help if it's legitimate. You can't just go over with no plan or show up and help old ladies across the street. I'm sure that's not your plan but you know what I mean. You need to present your plans in a clear, concise, professional manner. You may want to set up a special bank account for the money you raise. People will be more apt to donate if the money is going to a fund in a bank than if you're just going to put the cash in your pocket. Once you have made up a good portfolio, make lots of copies and carry them with you. Give them to every business you go into, send them to local schools, newspapers, radio stations, etc. Good luck.

The problem is, you want to do your volunteering overseas, which means perhaps that your desire to serve humanity is somewhat mixed up with a desire to travel and see the world. Since everyone has the latter, it is difficult to find sponsors who are impressed enough by the former to want to pay for your trip. That said, depending on the kind of volunteering you intend to do, a church might be a good resource, especially if you are already a member! Your own school/university is also a good resource. Other than that, you can try some kind of small business, like selling lemonade in the park. But your best bet is to get the money the old-fashioned way: get a job, earn it.

This seems like a workable idea...
A "getting to know you fund raiser". What you can do is, have singles come together (21+) and pay $20-40 to enter the event.
How it works, everyone fills out an information sheet and a date-sheet. there is a control number on the sheet and on their name tag. It would be like Alex M1, John M2, Hans M3. For females it would be Jan F1, June F2, Alexia F3, etc. The reason for the control number is incase there is two people of the same name there, the M and F, being used to keep the piles separate.
It would involve social interaction games, speed-dating.
at the end of the evening, people would turn in their date-sheet to the event coordinator, Such as John M2; would write down whom he likes and would like to send (copies) his information sheet to, and if they like him back, they will call or e-mail him.
This idea could also be adapted for gay and lesbian meetings.

Christmas is coming up, and with the season for partying, why not just organise a mask party! Invite friends and friends of friends, ask everyone to bring a bottle, plus a donation of £5 for your good course!

Go to womens clubs and other 501c-3 tax exempt organizations that do fundraising activities in your city. It sounds like too big a job to do by yourself.
