They are indeed regulations that Christians are not bound to.

They are now outmoded, although we are still careful about shellfish, for exactly the same reasons they were. I always cook pork more thoroughly than beeef or lamb, and tattooists are very strictly controlled.
They are not so much invalid as "overtaken by events".
PS I'm an athiest.

There are many things that the Bible says that we pick and choose at. Leviticus also says that while a woman is on her is on her period, she and EVERYTHING she touches is unclean for seven days, as is her husband if he sleeps with her. On the eighth day, she must go to the priest with two doves to make atonement with God for her unclean discharge. Until I meet someone who follows the laws of Leviticus word for word, I refuse to believe anyone who says that they interpret the Bible literally. We all chose what we will believe from the Bible, and set aside the rest.

The word of God simply evolved dear from the Old Testament to the New, sacrifices were made with flesh until Jesus Christ was born, and died, and suffered the ultimate sacrifice.

there is a large group of people out there who believe the leviticus laws are truth. we are called jews. the laws don't get their value from having "contemporary relevance". nowhere in the torah is there ever a reason given for one of the laws. they derive their relevance from the fact that G-d said that jews should do it, and that we should do it forever and not just "until we no longer feel they are relevant."

Dietary laws along with Temple Laws and sacificial laws were finished when the Messiah (Jesus) came. Even in the OT it tells this will happen when the Messiah comes. Moral laws are so we know where we fall short and why we need forgiveness.

Perhaps you DO NOT UNDERSTAND, that Liviticus, DOES NOT REFLECT THE CULTURE, but Was a standard for God's Choosen People, as is the Book of Deuteronomy!
