Roast beef and cabbage....that's one I never heard of. Corn beef and cabbage....Ham and cabbage...not ever roast beef and cabbage...None the less..Here's how how do it. Take the roast beef and braise(cook the outside) it in the pot with a little olive or vegetable oil, garlic, Salt and pepper. Once you have browned the entire outside of your roast you are going to have to add water. Depending on the size will determine how much. Just basically cover the roast with water. Add some beef base(bullion) add any spice you might like as well. .Cover the pot and let simmer on low heat. Again depending on the size of the roast will determine how long to cook it. At least 2 hours for 2lbs or less...add an hour for each additional pound. During the last hour to hour and a half add your cabbage ,onions and carrots for more flavor Cover the pot and let simmer until you are ready to eat. Should take about 5 hours total if the roast isn't bigger than 6 or 7 lbs. The meat should basically fall apart. Anytime I cook Cabbage with meat I always add butter to the pot. Just makes the cabbage taste even better with the juice from the roast.

Cook the roast a couple of hours on low heat before you put the cabbage in. If you try to cook it all at once the cabbage will dissolve into nothing. Cut the cabbage into wedges so it will stay together during the cooking.
