I want to make truffles to use as Christmas gifts this year. How well would they ship, though? They're awfully melty. What should I do to make it work better? Some would be going to Texas, and I understand it's hot there.

You could send them on next day service using the mailable refrigeration (ice) packs. I can imagine it would be kinda expensive, though.

When I lived in Japan my family sent homemade cookies, fudge and candy to me from California. They survived the trip really well but tasted like diesel and cigarettes, even though they were tightly wrapped in foil and shipped in a box.

You really need to consider the type of environment they will be in during shipping and how they are packaged. They may not taste so great by the time they get there!

Freeze them, use over night mail. Consider dry too. I would put them in a cookie tin, separating rows with waxed paper.
