Tonight, my husband fried shrimp and french fries. My 18 m/o son ate a few fries, that were cooked in the same veg. oil as the shrimp. Now, his eye is slightly puffy, and he has a light splotchiness on his face. He is breathing normally, and playing normally, so I see no need to call his pediatrician, but if this is an allergic reaction, how will we know? Should we try to feed him a shrimp, or keep all seafood away from him from now on? No one in our family has food allergies, so I am clueless here.
Thanks for any input.

Don't feed him more shrimp! or anything that was cooked in the oil after the shrimp was cook. You never know how bad the second reaction might be. I would call the pediatrician Monday morning and get in to talk to him I would ask the doctor if they could send you to have him tested for allergy to shrimp. Most people's reaction effects their breathing, Many of them die this could be taken care of with a kit that you would carry with you.

If it is an allergic reaction to the shrimp, feeding him a shrimp would be an EXCEPTIONALLY BAD IDEA. Allergies to shellfish can result in very dangerous outcomes for the people who suffer from them, so keep the shrimp away from an 18 m/o child in the future.

I'm not sure if it's something that they can test him for, but you should probably seek some feedback from a professional.

Further, anyone can suddenly develop an allergy to shellfish at any moment, or so I've heard.

When I was growing up I was very allergic to seafood (most specially to shellfish). If I had something that had a tinge of seafood in it, I'd develop hives all over my face and body in a split second. I took antihistamines every day if I wasn't sure about the food I'm eating.
Since you're not aware of what could have caused the allergic reaction in your son, I suggest you bring him to an Allergist (doctor specializing in allergies). They will give him a skin test of different kinds of allergens (substances that cause an allergic response in some individuals). By knowing what he's allergic to, you'd prevent a break out.

I am allergic to shellfish...be careful of shrimp, crab, lobster, squid, octopus, clams, oysters etc...the allergy is usually an allergy to iodine in the shellfish.

If he is allergic to shrimp, you don't have to worry about ALL seafood, just shellfish.
