I love fish and am always trying new recipes. Does anyone know of some good recipes?

You looking for something different right?....I love fish its all I eat...
try this dish its my fav for salmon.....

fresh salmon filet
mayo
english mustard (must)
fresh mint
fresh dill
fresh parsley
salt pepper

Fresh salmon filet.
spread top of fish with a mix of mayo and a bit of english mustard.....(make a paste, check before spreading english mustard is real strong)....then once top of fish has nice covering of paste...combine the following in a bowl...fresh dill chopped small fresh mint and parsley...equal amounts of each..enough to give the top a good coat of herbs. pat herbs on top of paste season with salt and pepper and bake for 12-15 mins or untill fish is done to liking...you can also pan fry...yummm....

BAKED TILAPIA

1/4 c. celery
1/4 c. onion, chopped
1/4 c. sweet red pepper, chopped
3 tbsp. butter
3 tbsp. flour
Salt and pepper to taste
1/2 tsp. dried tarragon
1/2 tsp. dried basil
1 1/4 c. milk
1 c. Mozzarella cheese, shredded
1 1/2 lbs. Rain Forest Tilapia fillets

In a medium skillet, saute the celery, onions and sweet red pepper in butter until tender. Add the salt, pepper, tarragon, basil and milk; mix well. Cook for 1 minute, stirring constantly until thickened. Add the cheese and stir until melted. Do not boil. Rinse the Tilapia fillets in cold water and drain thoroughly. Place the fish in a 12 x 8 x 2 inch baking dish; spoon the sauce evenly over the fish. Bake at 425 degrees for 8 to 10 minutes, or until the fish flakes evenly when tested with a fork. Serves 4.

I know it's not a fashionble fish, but try pan-fried Tilapia fillets with mash and whatever veg you like....sprinkle with salt, pepper and a tiny bit of white wine if you have it...literally a drip (like vinegar on fish)

Or, bake a salmon fillet in a foil parcel with salt, tiny bit of white wine and fresh dill...incredible...add black pepper after to taste...20-25 mins will do it but you can't go wrong (though leave some space in parcel for the steaming -like a tent).

Also...red snapper pan fried..simple

Simpler the better with good fish...

"Savory Hidden Valley Broiled Fish" - 4 servings

1 (1 oz.) packet Hidden Valley Original Ranch Dressing Mix
1/3 cup lemon juice
3 tbsp. olive oil
3 tbsp. dry white wine or water
1 1/2 to 2 lbs. mild white fish fillets, such as red snapper or sole
Original Ranch Tartar Sauce (optional)

Combine all ingredients (except fish and tartar sauce) in shallow dish; mix well. Add fish and coat all sides with mixture. Cover and refrigerate 15-30 minutes. Remove fish from marinade and place on broiler pan; broil 9-12 minutes or until fish begins to flake. Serve with tartar sauce, if desired.
ORIGINAL RANCH TARTAR SAUCE:
1 (1 oz.) packet Hidden Valley Original Ranch Dressing Mix
1/3 cup mayonnaise
1/3 cup sour cream
2 tbsp. sweet pickle relish

Remove 1 tbsp. dressing mix from packet; blend with remaining ingredients. Chill 1 hour. Yields 1 cup.

I like to cook cod with an easy provencale. Here's how it goes:

Sauteed onion slices
Stewed tomatoes
Sliced black olives

Place Cod in baking dish. Top with vegetables and season with salt and pepper and a pinch of sugar. Bake
