It means "shut up". It's an informal, second-person command.

Callate means to shut up or be quiet.

In Spanish, words are separated in syllables and all words have accents if we identify the intensity of the sound of syllables in a word. They are separated in 3 categories: Agudas, Graves and Esdrújulas.

Agudas are the ones that have a stronger pronunciation (intensity) in the last syllable:

co-ra-ZÓN, pa-RED, ca-FÉ, a-MOR, etc.

Graves are the ones with the stronger pronunciation in the syllable before the last one:

di-A-rio, JO-ven, ÁR-bol, CRI-sis, FÉ-mur, e-XA-men

Esdrújulas have the strongest pronunciation in the third syllable:

PRÓ-xi-mo, MIÉR-co-les, PÁ-ja-ro, HÉ-ro-e, sin-TÉ-ti-co

Some people have difficulty with Spanish because they do not know where to place the "grammatic accent" (acento ortografico) better known as TILDE (ó). All words have accents (the intensity of the syllable) but not all words have the "physical" grammatic accent or tilde.

Agudas have it only when a word ends in a-e-i-o-u-n-s.

With tilde: mamá, bebé, maní, cayó, ombú, construcción, anís...

Without tilde: hoNOR, verDAD, aZUL, ceNIT,feLIZ, reLOJ, actiTUD, personaliDAD...

Graves have it in any word that does not end on "n" or "s" unless they are grouped with another letter.

With tilde: útil, áspid, carácter, alférez, ónix; fórceps, bíceps...

Without tilde: VIRgen, CRImen, eXAmen, voLUmen, oRIgen, dicTAmen, MARtes, DOsis, ciElo, TEma, suAve...

Esdrújulas, thier strongest syllable always coincides with a tilde therefore they always have one:

régimen, máquina, hepático, música, término, hipopótamo, válido, auténtico...

...so, Cállate is an esdrújula, the strongest syllable is CÁ, therefore it must have a TILDE (accent).
