As host it is your job to make people feel welcome in your home. Ask guests to help with clearing the table and the dishes. This is one of my most fond memories when I was a child is helping my mother and grandmother with dishes. I got to dry the plastic stuff!
Create an atmosphere where the evening winds down. Then people will naturally gravitate towards going home. For our family, this is serving dessert after dinner with decaf coffee. (no caffeine.) My grandmother also had dimmer lights and woud lower the amount of light in the room. Eliminating the TV or any video games is also helpful. Play cards or a board game and the evening will typically end earlier. By the way yawning is contagious and by yawning, people may tend to feel a bit more comfy, sleepy and ready to go home.
Ask one of your guests who will not be upset to set the example by announcing that they are leaving, this often cues people in to leave for the evening.
That is what I would do....

That is rude to stay the night when you live in town. It's even ruder when it wasn't he host's idea. Whenever things wind down, you have to look for signals. If the host doesn't have children, take yours home when it gets to be too late. If you have kids, then you should either take them home at an appropriate time, or if it's the kids' idea, and the parents agree, the kid can stay over--BUT NOT THE WHOLE FAMILY!!!! It is appropriate to help clean up. That should be expected. You never leave a mess for someone else, and never let your kids do so either. Such signals you need to look at are them looking at the clock or a watch. Are they much involved in the mingling? If they aren't then you need to start getting things together. You might want to help the host get everyone's things together neatly. Offer to help load it in the cars. Those are kinder ways of saying, "well, it's been great but we need to be heading home."

Well, I think it's time for the 'hosting family' to tell some of the others to host Christmas. Why would they continue to host selfish and ignorant people like that?

If your the host, put a time limit to the party. for instance put something on the invintation like 6-11pm or something like that. they should respect your time limit. if they dont and ask why say something like i have alot to do tommorow. or i had to get up early this morning. maybe even say i had a busy week. they should understand. but if you are a guest, i wouldnt stay past 10:45

the hosting family should set some boundaries.....people should leave before everyone starts to get tired and ready for sleep.....maybe alcohol consumption should be limited or eliminated if they want people to leave

Time to be assertive and stand up and say what you mean and get the bludgers out of the house.
