-With steak, serve each one with a 'butter-pat' sized piece of blue cheese on it (and nothing else except salt and a bit of pepper- NO barbecue, steak or other sauces)

-On a baked potato- add some sour cream and/or butter (and veggies if you like) but nothing else with it's own strong flavor

-On a toasted English muffin or hard roll- thin slices of blue cheese and then spread your favorite jam or jelly on top... this packs a flavor punch!

-Salad, of course. Use a nice leaf lettuce (not iceberg) and plum tomatoes. Keep it simple.

-Fresh, crumbled blue cheese is also great in creamy potato-based soups. Puree the soup (try a basic potato soup with grated, lightly sauteed carrots; finely chopped sauteed leeks and celery; cook. When veggies are tender, add crumbled blue cheese (it needs to melt); sour cream and finely chopped parsley. Puree this, reheat and enjoy!)

Fruits such as pears, grapes, and apples are a good accompaniment to bleu cheese. You can perk up a mild mixed green salad with it, as well. You can serve steak or hamburgers with a few crumbles of bleu cheese on top -- delicious!

There are also recipes which call for mixing bleu with cream cheese or sour cream to make a cheese spread for crackers or a dip for chips. And a wedge of Stilton with a glass of red wine is a great meal all by itself! :)
