I've been looking for an easy recipe the still is really good. I wanted to "wow" my family tonight by cooking dinner for them. Any ideas on what I could cook?

How about PAELLA? Its easy and u save the time.

PAELLA (serves 6)

1/3 cup of Olive Oil
1 Small Onion, minced
2-3 cloves of garlic, crushed
3-5 tbsps minced fresh parsley
1 generous pinch of saffron
2 tbsps of chicken bullion
3 skinless Chicken Breasts, cut in large chunks
2 green peppers, sliced
1 red pepper, sliced
1 tsp of yellow food coloring (optional -- saffron is very expensive, a pinch
of it is all you need for taste but a richer color is desired)
8 oz tomatoe sauce
1 tsp sugar
4 cups of rice
7 cups of water
salt
1/2 lb - 1 lb shrimp, leave shell on
1 lb scallops

Saute onion, parsley, and garlic in olive oil until the onion begins to become transparent. Add saffron, chicken bullion, chicken, peppers and saute until chicken has become white. Add tomatoe sauce, sugar, food coloring. Stir. Add rice & water and bring to boil. Salt to taste. Boil 5 minutes, stirring occasionally. Add shrimp & scallops, boil an additional 5 minutes, stirring occasionally. Simmer 10 minutes covered, stirring occasionally. If the rice appears to be getting too dry during the last 10 minutes, add more water. If the rice is too wet at the end of the 10 minutes, uncover and evaporate unwanted liquid.

If you have a crock pot I have the best pot roast recipe.... Get a good looking rump roast and about 2 cups baby carrots and 4 cups of potatoes. You will need one package of McCormik pot roast seasoning, it comes with a bag to cook it in the over but just save the bag for something else. You will also need 2 cups beef broth. Wash the potatoes and cut into cubes. Put potatoes and carrots in first then the roast on top, add seasoning and beef broth and let cook for 5 hours on high or 7 hours on low. Meat will fall apart and family will love it!

Romano Chicken

Takes 10 mins to prepare and about 4 mins on high in Microwave!

INGREDIENTS

* 4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
* 1/4 pound Swiss cheese, sliced
* 1/4 pound ham, sliced thin
* 2 tablespoons grated Parmesan cheese
* 1 1/2 teaspoons paprika
* 1/2 teaspoon garlic salt
* 1/2 teaspoon dried tarragon
* 1/2 teaspoon dried basil leaves
* 1 tablespoon butter, melted
* 1/3 cup dry bread crumbs

DIRECTIONS

1. Place chicken breasts on a pan. Place Swiss cheese and ham slices on top and roll up, securing with toothpicks if necessary. In a small bowl combine the Parmesan cheese, paprika, garlic salt, tarragon, basil and bread crumbs. Mix together and dip rollups in mixture to coat.
2. Drizzle with melted butter and cook on High in microwave for 4 minutes, or until chicken is cooked through and juices run clear.

Easy delicous oven fried chicken..

INGREDIENTS

* 2 cups low fat sour cream
* 4 cloves garlic, minced
* 6 chicken drumsticks
* 6 bone-in chicken breast halves, with skin
* 4 cups crushed cornflakes cereal
* 4 tablespoons crushed dried rosemary
* 3 teaspoons dried sage
* 3 tablespoons garlic powder
* salt and pepper to taste

DIRECTIONS

1. Preheat the oven to 350 degrees F (175 degrees C). Place a cooling rack on top of a large cookie sheet. Spray the rack with vegetable cooking spray.
2. In a medium bowl, mix together sour cream and minced garlic. In another bowl, stir together the cornflake crumbs, rosemary, sage, garlic powder, salt and pepper. Coat the chicken with the sour cream mixture, then roll in the cornflake mixture. Arrange chicken pieces on top of the cooling rack.
3. Bake for 1 hour in the preheated oven, until meat is no longer pink, and juices run clear.

gazpacho is good(its the only thing i can cook by memory!!!)



Ingredients:
6 Roma tomatoes
1 bell pepper
1 Anaheim pepper
1 cucumber (small)
2 cloves garlic
3 tbsp olive oil
2 tbsp vinegar
Croutons


Directions:
Crush or mince garlic. Add peppers, tomatoes, cucumber (peeled) and process in a food processor until semi-liquefied. Add olive oil gradually. Add vinegar and stir until mixed.

Salt and pepper to taste, serve very cold with croutons.

Try this and it's healthy
1pound broccoli rabe, trimmed of damaged leaves
1 pound orecchiette or other pasta noodle
2 tablespoons water
4 to 5 cloves garlic, thinly sliced
1/2 pound Italian sausage, cut into quarter-inch slices
Salt
1 cup coarse, seasoned bread crumbs, toasted, optional garnish
Pecorino Romano or Parmesan, optional garnish

Cut the broccoli rabe into 3 to 4 inch pieces, discarding the stems. In a large pot of rapidly boiling water, blanch the broccoli rabe until tender and cooked through, about 5 to 6 minutes. Before you drain broccoli rabe, reserve 1 cup of cooking liquid. Drain and rinse the broccoli rabe with cold water until it has cooled off. Spread it out on a towel to finish draining.
Meanwhile, cook the pasta in a large pot of boiling water according to package directions until al dente.
While the pasta is cooking, place 2 tablespoons of water into a cold skillet with garlic and sausage and then turn heat to medium-low. Cook, stirring occasionally, until garlic is golden and sausage is cooked through, about 5 to 7 minutes. Pour reserved broccoli water into pan with sausage.
When the pasta is cooked, drain it and place back in pot you cooked it in and season with salt. Pour sausage sauce over pasta and stir in cooked broccoli rabe. Taste and adjust seasonings. Serve immediately.
If the Queen's coming to dinner: Garnish with fresh bread crumbs and/or freshly grated pecorino Romano or parmesan cheese.

Vegetable oil
1 tablespoon kosher salt plus 1 1/2 teaspoons
3/4 pound linguine
3 tablespoons unsalted butter
2 1/2 tablespoons good olive oil
1 1/2 tablespoons minced garlic (4 cloves)
1 pound large shrimp (about 16 shrimp), peeled and deveined
1/4 teaspoon freshly ground black pepper
1/3 cup chopped fresh parsley leaves
1/2 lemon, zest grated
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 lemon, thinly sliced in half-rounds
1/8 teaspoon hot red pepper flakes

Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.
Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine.

When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.

take out fresh potatoes one per person and two extra then dice them leave skins on or peel them off and then dice them and put in water let water boil and mash them with cheddar cheese and garlic sour cream or just cheddar cheese and milk and mash till well blended
open a can of cream corn for siding also
for main meat make mini meat loafs with cheddar cheese filling and alittle bbq drizzled on top

take ground beef add salt parsley and garlic egg bread crumbs and mix welll then form a mini meat loaf for each person and dig out center leaving bottom in tack and add cheddar cheese then fill back up with meat and put on pan with bbq sauce on top and cook in oven while u boil potatoes and when potatoes are don they should be and ur good

homade macorni and cheese, cassorole,
but in the cassorole put in ham slices, bacon bits and sliced tomatoes in top with bread crumbs, easy and they will love it
