here is a great recipe...
1 1/2 cups peanut butter
1/2 cup margarine or butter
1 lb powdered sugar
1 teaspoon vanilla
1 1/2 cups chocolate chips
Crisco
Mix peanut butter, margarine or butter, powdered sugar, and vanilla in bowl (It helps to soften the margarine).
Shape into 1" balls.
Refrigerate balls.
Meanwhile, melt chocolate with a bit of crisco (so the chocolate will harden. Without crisco, chocolate will remain soft.) in double boiler.
Insert toothpick into refrigerated balls and dip into chocolate, leaving small area resembling a buckeye.
Cool on wax paper and store in refrigerator or freezer.

Chocolate Covered Peanut Butter Balls:
Ingredients:
1 lb. butter
2 lb. bag of powdered sugar
one 28-oz. jar creamy peanut butter
Preparation:
Melt butter in a saucepan. Pour into a bowl and mix together powdered sugar and peanut butter until a soft dough forms (don't let it become too dry). Roll the dough into small balls and refrigerate for one hour.
Topping Ingredients:
1 block of gulf wax (paraffin)
one 12-oz. bag chocolate chips
Preparation:
(In a double boiler), Melt chocolate and wax. Dip peanut butter balls into mixture and let dry on wax paper.
Yield: 70 to 100 balls
I prefer serving these direct from the freezer but many prefer them at room temperature.

1 18-ounce jar peanut butter
2 pound powdered sugar
1 cup butter, melted
mix together and form balls (you may need to chill first)
This is the point where mine may be different
place a toothpick in the top of each ball, line them on a tray and freeze.
Melt your favorite chocolate (my husband likes dark chocolate the kids favor milk chocolate) dip frozen balls in melted chocolate and place on waxed paper to set.
Good Luck
*This can also be done with marachino cherries, freeze them stem up, and dip in melted chocolate*

This is a variation with Rice Crispies in them - nice crunch!
http://allrecipes.com/recipe/peanut-butter-balls-iii/detail.aspx
The link has several versions of the recipe over to the left side. . .
One with maraschino cherries, which I'd never heard of. Run them past your husband, and see which sounds the best!
