How to make rock cake:
These cakes are an absolute tea-time stand-by. They are inexpensive and easy to make but are scrumptious.

Ingredients
2 cups flour
1/2 teaspoon baking powder
3 tablespoons butter
1 1/2 tablespoons sugar
1 egg, well beaten
2 tablespoons milk
2 tablespoons currants or sultanas

Method
- Rub the butter into the flour.
- Add the dry ingredients.
- Beat in the egg and a little milk if the mixture is too stiff.
- Pile heaps of the mixture onto a greased baking tray.
- Bake in a 350ºF oven for 15-20 minutes.

8oz self raising flour
pinch salt
4oz margarine
4oz sugar
3oz currants,sultanas or raisins (or mixture)
1 oz mixed peel (if you don't like this just put extra 1oz of currants in)
1 egg
milk to mix

Rub marg into flour and salt,stir in fruit,peel and sugar. Mix to stiff dough with egg and a little milk. Place in rough heaps on a greased baking tray and bake for 15-20 mins at 200c,400f,gas 6

Cocnut Rockbuns
3oz Marg
3ox sugar
3oz coconut
8oz S.R flour
1 egg

Rub fat into flour,add sugar and coconut then mix to a stiff dough with egg and a little milk. Make 14 rough mounds and bake at gas 6,200c,400f for about 15 mins

JUST RUB THE BUTTER INTO THE FLOUR TILL IT RESEMBLES BREADCRUMBS, THEN ADD THE MIXED FRUIT,MAKE A LITTLE WELL IN THE MIDDLE OF THE MIXTURE AND POUR IN EGGS, FOLD INTO MIXTURE. YOU SHOULD HAVE A FAIRLY STIFF MIX, IF IT IS TOO DRY JUST ADD A BIT OF MILK. THEN PLACE HEAPED DESSERTSPOON'S ONTO A BAKING TRY, BAKE FOR 10 TO 15 MINS GAS4 ELC165.
