Pan Seared Tilapia with Tomato Caper Sauce

Ingredients:

4 5- to 7- ounce fresh tilapia fillets
salt and pepper
2 tablespoons olive oil
2 medium tomatoes, chopped
2 tablespoons capers, drained
2 1/2 tablespoons butter
1 1/2 tablespoons Worcestershire sauce
1 tablespoon lemon juice

Preparation:

Seed and dice the tomatoes. In a hot frying pan, heat 1/2 tablespoon of the butter. Add the diced tomatoes, capers, Worcestershire sauce, lemon juice, salt and pepper. Cook on low heat quickly for about 2 minutes. Remove from heat and stir in remaining 2 tablespoons of butter and set aside. Do not reheat.

Salt and pepper the fillets. Heat a frying pan, then add the oil. When oil is hot, add the fillets and brown on both sides, turning only once. This will take about 3 minutes per side. Remove to a plate and spoon the tomato sauce over the fillets.

soak (marinade, whatever) the tilapia in lemon juice for about an hour. then, take herb flavored stove top stuffing, pulverize it until it is in near-powder like form, and coat each side of the tilapia. bake it for about 40 minutes on 350 degrees...and voila! it's oh so yummy

What I do with lean white fish is I place it in a pan with minced shallots, white wine, lemon juice, season with salt and pepper, drizzle it with olive oil, and bake untilit is cooked. I usually dip the fish in bread crumbs first, but you may not want the carbs in your diet. Its very good with flounder, red snapper any non oily fish. Its we served it on specials nenu in restuarants and called it " ala Bianco" or with white wine.

I marinade it in Italian dressing, and it helps ~ just find a dressing with lots of flavor and no fat. Yum!

There are several good bottled marinades available at your local grocery store that would kick up the flavor.
